Grilled meat vermicelli in the South and Central regions
In the South of Vietnam, the name "bun thit nuong" is widely known. But in the North, people use "bun cha" to refer to this delicious dish. At the same time, each region has certain differences in this dish and this uniqueness is shown in the way the meat is sliced as well as the shape of the meat.
According to the traditional way of choosing meat, shoulder meat is the most perfect meat to prepare this grilled pork noodle dish because of its firm meat fibers and ideal fat content for grilling over hot coals. Before grilling, the pork must be kept intact and marinated thoroughly.
The marinating process plays a very important role and is the deciding factor in creating the main flavor and unique characteristics of the dish. The marinade should not be too strong because the dish is also added with fish sauce before serving diners, but it should not be too light to keep the rich flavor of the meat. The secret ingredient for this dish is vegetable oil, however, the amount of vegetable oil is flexibly added by the cook to suit the freshness of the pork. If the mixture of spices and marinated meat is dry, one or two teaspoons of vegetable oil will help soften the meat and stick together into a block. In some places, lemongrass is added during the marinade to create a strong aroma for the dish.
The sauce served with grilled pork vermicelli includes fish sauce, pepper, salt, sugar, minced shallots and garlic.

After being marinated, the meat will be skewered on bamboo sticks or a grill to be grilled and like other grilled dishes, the meat will also be grilled directly on hot coals. Some restaurants also wrap the meat in banana leaves to keep the richness and enhance the flavor of the meat. When grilling meat, people must pay attention to how to grill the meat just right, soft, with a beautiful brown color, and at the same time have the right amount of melted fat covering the meat to keep the moisture. To achieve this, the griller must always keep an eye on and adjust the temperature of the coal in time so that the coal is not too hot or has the necessary amount of heat, otherwise the meat will be burnt but the inside is still not cooked.
Normally, grilled pork vermicelli is served with some side dishes such as fresh herbs, bean sprouts, lettuce, basil, mint and fish sauce. People often arrange the grilled pork vermicelli in a bowl with a layer of vermicelli, a layer of fresh herbs, on top is grilled pork sprinkled with some roasted peanuts and green onions.
