Specialist Doctor 2 Huynh Tan Vu (Day Treatment Unit, University of Medicine and Pharmacy Hospital, Ho Chi Minh City - Branch 3), said that jam is an indispensable dish during the traditional Tet holiday of Vietnamese people. No matter how many years have passed, the sweet and fragrant taste of Tet jam is always deeply imprinted in the mind of every Vietnamese person.
With the natural colors of fruits and vegetables, each type of jam brings different sour, spicy, sweet, and rich flavors, symbolizing the five colors in the Five Elements of heaven and earth, which support and create conditions for all things to grow. A type of jam that is often favored by people on Tet holiday in recent years is grapefruit peel jam, which is both delicious and beneficial to health.
Grapefruit is known as a food rich in nutrients and vitamins. But most people only care about the grapefruit segments inside, few people know the benefits of the grapefruit peel.
Grapefruit peel contains coumarin, carotene and essential oils. It also contains pectin and a little limonin. Here are some of the effects of grapefruit peel jam.

Improve digestion
During Tet, many energy-rich foods such as pork roll, pork roll, braised pork with duck eggs and drinking alcohol will make the body prone to accumulate toxins, causing digestive diseases such as constipation, diarrhea, bloating, indigestion, etc. Grapefruit peel jam contains a lot of fiber, reducing digestive problems.

How to make dried grapefruit peel jam
Doctor Vu instructs that to make dried grapefruit peel jam, you can use simple ingredients including the peel of 2 grapefruits, a little salt, 140g of white sugar, and 1 fresh lemon.
Peel the grapefruit, remove the white pith and cut into bite-sized pieces. Soak the grapefruit peel in warm water mixed with a little diluted salt. Then gently squeeze the grapefruit peel for about 30 minutes.
Bring a pot of water to a boil, then add the grapefruit peel and blanch for about 5 minutes or until the grapefruit peel has a slightly bitter taste, then turn off the heat. Remove the grapefruit peel and rinse with cold water, drain.
Cook the sugar water to make sure the ratio of sugar to grapefruit peel is 1:1. Then, squeeze 2-3 lemon slices into it and soak the grapefruit peel for about 3-4 hours. Take the grapefruit peel out to dry and then dry it in the sun for about 3 hours (this depends on the weather and the dryness and crispness of the jam if you want).
After achieving the desired dryness, put the grapefruit peel jam in a jar with a tight lid and you can eat it all Tet season.
"The crunchy, sweet, fragrant grapefruit peel jam has become an indispensable part of Vietnamese cuisine. Different from the sweet taste of coconut jam, the sour taste of orange jam, grapefruit peel jam brings a strange, spicy feeling, adding a little sweetness to create a new, unique feeling, suitable to enjoy in the first days of the year", Dr. Vu shared.
