When talking about Quang Nam, people think of Quang noodles. This dish is not only attractive because of its "very Quang" flavor but also because of its special connection with the life and cultural space imbued with "Quang" essence.

Quang noodles have no recipe or standards. It is simply a popular dish of the people of Quang and gradually became a specialty in Quang Nam.

Quang noodles are not only eaten but also enjoyed by the eyes and the nose. This dish has very unique features, which are delicious, attractive, rich and familiar. Quang people in the art of cooking really like the multi-flavor style and all of those flavors complement each other, creating a very rich overall flavor.

The process of making this noodle dish is quite simple, but requires skill and sophistication. First, the rice must be soaked until soft, then used a stone mortar to grind with water to make a fine powder.

After grinding the rice flour, people use a round mold with a straight cloth stretched over a pot of boiling water. The lid can be a conical hat to keep the steam in, or a low-cut coconut shell with a bamboo handle. When pouring the rice flour onto the cloth mold, people turn the shell upside down to spread a thin layer of flour evenly over the mold, cover it for a few minutes until the cake is cooked, spread another thin layer of flour to make the noodles thicker, and use a thin bamboo knife to take the cake out to dry on bamboo trays. After the cake has cooled, oil is applied to the cake and then placed in a banana leaf basket, covered tightly to prevent the noodles from drying out.

At the same time, use flour mixed with sesame, spread the dough once very thin, take it out and arrange it on a bamboo tray to dry in the sun to form rice paper. On hot summer afternoons or cold autumn afternoons, stop at a roadside stall to drink a bowl of fragrant green tea, then eat a bowl of Quang noodles to warm your heart: "Love each other, scoop a bowl of green tea/Make a bowl of Quang noodles to warm your heart".

The art of making broth and seasoning depends on the skill of the housewives, not necessarily following any specific recipe. Whether the broth is made from chicken bones or pork bones, it must be clear and sweet, different from pho broth made from beef bones.

Eating Quang noodles must have crispy grilled rice paper, thinly sliced ​​fresh banana blossom, common herbs must include bitter herbs, fragrant basil, mustard greens, spring onions, coriander, cilantro must have sour, spicy, sweet, bitter flavors and served with fish mint. After pouring the broth over the bowl of Quang noodles, it is not too full, on top of the noodles sprinkled with golden, crispy, fragrant roasted peanuts.

The perfect combination of golden noodles with soft, fragrant chicken, fatty peanuts and herbs mixed in a rich, creamy sauce is ready to conquer the taste of any picky diner.
