Along with the development of cuisine, tofu skin (the Southern term for bean curd skin) gradually appeared in daily meals to prepare both vegetarian and non-vegetarian dishes. Therefore, the demand for tofu skin during Tet also increased.
With a wide consumer market in provinces and cities in the Mekong Delta region, My Hoa tofu skin production village in My Hoa commune, Binh Minh town, Vinh Long province is operating at full capacity to ensure orders for Tet.
Visiting production facilities in craft villages on the eve of the Lunar New Year, one can feel the heat from the stoves.
During Tet, every house is lit day and night, only on the 29th night of the Lunar New Year do people begin to temporarily stop working to have a few days of Spring fun to celebrate Tet.
According to villagers, the tofu making profession is busiest during Tet and the three big full moon seasons of the year: the full moon of the first, seventh and tenth lunar months.
Under the smoldering heat of the stoves, skilled workers still diligently "take care" to ensure each tofu sheet achieves quality.

At Thanh Dat Tofu Production Facility (My Hoa Commune), nearly 10 workers are busy with the steps of slitting, picking up tofu, hanging it on a drying pole, and wringing it all by hand. The tofu leaves and stems are dried on the rack using the heat of the oven. The cooks have to endure the great heat from the stoves to be able to perform the steps.
Ms. Nguyen Thi Thanh, owner of Thanh Dat tofu production facility, said that on normal days, the facility supplies the market with about 4-5 tons of tofu. During Tet, the number of orders increased by nearly 30%, so the facilities increased their capacity, keeping the fire burning day and night. Each cook works for about 22-24 hours, which is quite a hard job because they have to endure the heat from the stoves, and have to work continuously to ensure the tofu sheets are delicious and of good quality.
"During Tet, the facility also hopes to increase orders to gain more profit and increase income for workers. After working hard all year, everyone hopes that Tet will be more prosperous and fulfilling," Ms. Thanh shared.
At Thanh Cuong Tofu Production Facility (My Hoa Commune), during Tet this year, the facility continuously operates 3 charcoal kilns, producing an average of 140-150kg of tofu per day. At the facility, workers are busy cooking tofu, packaging it, and some are making orders to prepare for delivery to customers.
With many orders and continuous operation of tofu production facilities, local people have more income.
Taking advantage of the days before Tet, Ms. Le Thi Huynh Nga, from My Hoa commune, is busy working extra at production facilities in the cooperative to earn more income. Packaging work does not require technical skills, but mainly requires diligence, so it is suitable for her age and health.
“During Tet, I work almost every day. I work early to make more money, and when I finish my work at one facility, I go to another. Helping with packaging and labeling in the morning also earns me more than 100,000 VND. With the extra income, I can buy Tet items,” said Ms. Nga.
According to Mr. Dinh Cong Hoang, Head of the My Hoa Tofu Cooperative, Binh Minh town, the cooperative currently has more than 30 members. Previously, the villagers mainly produced tofu, but now the establishments have diversified their products with many types such as dried tofu, young tofu, buffalo tongue, anchovy, etc. to meet the increasingly diverse needs of customers. The products of the village are not only consumed in the province but also favored by customers in provinces and cities in the Mekong Delta region.
This year, during Tet, the cooperative's orders increased by more than 20%, and the facilities were operating at full capacity day and night. The work required a lot of workers, so it also contributed to creating jobs for more than 100 local workers.
Mr. Dinh Cong Hoang excitedly said: “When you come to the craft village on Tet holiday, you will see the bustling production atmosphere of the people here. Every house is burning with fire to cook tofu day and night. When Tet comes, Spring comes, the people of the craft village are excited when the tofu products are bustlingly brought to the market and trusted by customers”./.
