Over 35 years old, the snail noodle soup here is popular with diners because of its clear broth and traditional flavor. Every day, the restaurant sells more than 1,000 bowls, up to 2,000 bowls on weekends, the busiest time is in the morning and noon.
The pot of broth at Ms. Hue's snail noodle shop is always full, attracting diners with floating tomato pieces, made from snail broth, tomatoes, vinegar, with a slightly sour, mild, clear and naturally sweet flavor. Notably, the shop does not use MSG like many other places.
The kitchen is located right at the entrance, always steaming. Every day, the restaurant imports 400kg of snails (including shells) as ingredients. While busy preparing food for customers, the owner said: "To have a delicious snail noodle dish, the snails must be fragrant, fatty and crispy. In the past, Hanoians not only soaked the snails in rice water to remove the fishy smell, but also soaked them in wine yeast."
In particular, the restaurant also has special snail sausage made by the store with its own recipe, making many customers curious to come and enjoy it.
Snail sausage is served with hot vermicelli with snails. Customers can also order this dish separately. Vermicelli with snails is served with raw vegetables, chili sauce or shrimp paste, depending on the customer's taste. Each bowl costs from 40,000 to 100,000 VND.
Knowing about Ms. Hue's snail restaurant through a friend's recommendation, Ms. Linh took advantage of the weekend to travel more than 10km from Gia Lam district to come here to enjoy. "The snails are cleaned, crispy, fatty and the broth is very tasty. On a scale of 10, I would rate the restaurant 9.5 points, minus point because the restaurant is too crowded," Ms. Linh said happily.
The weather in the North is about to turn to summer, many people have started to return to the refreshing cold snail noodle dish.
During a business trip from Ho Chi Minh City to Hanoi, Mr. Hung and Ms. Linh took the opportunity to come here to enjoy two special bowls because they rarely have the opportunity to enjoy them. "I really like the way the broth is made here. The snail sausage is crispy and fragrant, and the price is cheap," Mr. Hung shared.
Cold vermicelli with snails is a simple dish but contains many subtleties. The bowl of broth is light orange, slightly warm and has a fragrant vinegar smell. "Depending on taste, each person can add more chili and it must be very spicy to be right," the owner affirmed.
Linh and Trang immediately went to eat bun oc here when they arrived in Hanoi from Ho Chi Minh City. "I love the weather and especially love the cuisine in Hanoi. There are two dishes that I must try every time I come here: bun oc and bun cha," Linh said.
Many tourists come to eat at the restaurant, and when they leave, they still have to order more as 'souvenirs'. Cold snail noodle soup is picky about who eats it, but whoever eats it will be addicted and will remember it for a long time.
