How to cook delicious, clear jelly-like meat for Tet tray

Ingredients for cooking braised meat - Boneless pork leg 300g - Pig ear 200g - Pig skin 100g - Carrot: 1 - Shiitake mushroom 50g - Wood ear mushroom 50g - Shallot, ginger - Spices: Sugar, MSG, salt, seasoning powder, black pepper, white pepper, fish sauce, cooking oil.
How to cook meat jelly - Wash the pork leg with diluted salt water - Rub the pig's ear with salt, vinegar, lemon and then wash it - Put a pot of water on the stove, add the shallots and ginger and bring to a boil. - Blanch the pig's ear and pork leg for about 5 minutes, turn off the stove, remove and soak in a bowl of ice. - Then cut the pork leg into bite-sized pieces, the pig's ear into strips. - Marinate the meat with 3 tablespoons of fish sauce, 1 teaspoon of seasoning powder, 1/3 teaspoon of ground pepper for about 30 minutes. - Put the pot on the stove, add 1 tablespoon of cooking oil until the oil is hot, add the onions and saute until fragrant. - Next, add the marinated meat and stir-fry, stirring constantly until the meat is firm and fragrant. - Add 1 liter of boiling water to the pot and boil for about 20 minutes until the meat is tender - Then add the shiitake mushrooms, wood ear mushrooms, carrots and boil for another 10 minutes. - During the boiling process, skim off the foam regularly to make the water clearer.
- Season to taste and turn off the stove. - Arrange the carved carrots at the bottom of the bowl. - Scoop the cooked meat into a bowl or mold and let it cool. Note when cooking meat jelly - In cold winter weather, after only 2 hours the meat will solidify like jelly. - If the weather is hot, you can wait for the meat to cool and then put it in the refrigerator. - When eating, turn the bowl of meat jelly upside down on a plate and you will have an attractive bowl of meat jelly.
