Last week, Friedersdorf invited Atlantic readers to join the debate and present compelling arguments for their favorite food being the best in the world. Here’s a fascinating response from a reader named Rob.
Good food doesn't need Michelin stars
According to Mr. Rob, the best cuisine in the world cannot belong to countries with rare dishes, classified as delicacies, or only served on special occasions or really expensive.
"It must be a cuisine where everyone can enjoy great food, regardless of their budget or nutritional needs," this reader wrote. Therefore, he believes that Vietnam must be the "champion" on the world culinary map.
He says you don’t need a map or a Michelin star sign in front of a restaurant to eat well in Vietnam. The best food is served right on the street.
Sidewalk cafes around Notre Dame Cathedral are often crowded.
Mr. Rob describes that these roadside eateries often have cheap plastic tables and chairs, and the seats are sometimes only about 3 inches above the ground. Diners only need to spend about 1-2 USD at any sidewalk restaurant in Saigon and they may be extremely surprised to discover that it is the best meal of their life.
Healthy food
He explains why Vietnamese food consistently appears on lists of the world's healthiest foods. That's because the ingredients are always fresh and the way they are combined creates a light, bland feeling. "The dishes are not so numerous or so boring that they should only be eaten once or twice, but rather, diners can choose to eat them regularly," Rob writes.
And more importantly, diners can choose how they eat. While chefs from other cuisines are often reluctant to change the ingredients of a dish, Vietnamese people adhere to the concept of "do as you like".
Westerners eat at sidewalk restaurants in Hanoi
Don’t eat spicy food? Don’t worry, you can add as much or as little spice as you like. Not sure if you’re ready to eat something? Start with a bowl of pho and then some banh mi. And if you’re not a chopstick master, there’s always a fork at the table, Rob writes.
This American reader concluded that the world has many great cuisines. Each cuisine offers elaborate, delicious, and memorable dishes. However, he assured that Vietnam has the world’s number one cuisine. And everyone can enjoy those wonderful dishes.
