According to CNN Travel, the price customers have to pay for a bowl of pho like this is about 170 USD (4.1 million VND). Located in one of the tallest hotels in Vietnam, this restaurant said they only serve five bowls of the special pho every day.
“Pho is Vietnam’s national dish, enjoyed everywhere, at any time of the day, and I wanted to pay homage to pho with this luxurious new version,” said Le Trung, the restaurant’s executive chef.
According to the chef, although his special pho uses many high-quality imported ingredients, it is still cooked in the traditional way: bone marrow is simmered with rich oxtail, chicken and short ribs marinated with spices such as cinnamon and star anise for two days. This creates “a wonderfully impressive flavor”.
“This is my reimagining of one of the world’s most popular dishes. Traditionally, pho is not considered a fine dining dish, but we have tried to enhance the flavors to make this version as flavorful and appealing as possible,” said Chef Trung about his pho creation.
Adding gold leaf is to “enhance the aesthetics of the dish, so that it is not simply like a regular bowl of pho”.
As one of Vietnam's most popular dishes, pho is eaten by locals at all times of the day and is widely served across the country in homes, roadside stalls and restaurants.
Basically, a normal bowl of pho will have rice noodles soaked in beef or sometimes chicken broth, garnished with herbs and thinly sliced meat, with prices ranging from $1.50 to $3 - about VND35,000 to VND70,000.
Meanwhile, the special pho version mentioned above costs 50 times more because according to the restaurant's chef, this is the most attractive bowl of pho in the world.
"We want to take traditional cuisine to a new level of luxury and sophistication, pushing the boundaries of Vietnamese cuisine," the chef shared.
