How to make delicious meat jelly for Tet holiday
Step 1 preparation
- Clean the pig's ears and skin with vinegar and salt, rinse with clean water to remove the odor. Then, put the pig's ears, skin and ham hock in boiling water to remove the foam. When boiling, you can add a few dried onions to make the water fragrant. After boiling, take it out to cool and then cut the ham hock and pig's ears into bite-sized pieces. Next, marinate the mixture of pig's ears, ham hock with fish sauce, pepper, and seasoning for about 1 hour to absorb the spices.
- After the pork skin has been blanched in boiling water, cut into bite-sized pieces.
- Finely chopped shallots, peeled and carved carrots.
- Soak wood ear and shiitake mushrooms, wash and slice into strips.
Step 2 processing:
- After marinating the meat, add the chopped onions and saute until fragrant, then add the meat mixture and stir-fry until firm and the spices are absorbed. Pour water to cover the meat. If you like to eat more clear jelly, add more water. Then add all the blanched pork skin and cook with the meat. Simmer until the meat is tender. To shorten the time, you can use a pressure cooker to simmer. During the cooking process, be sure to continuously skim off all the dirty foam to keep the water clear.
- Saute wood ear and shiitake mushrooms separately; saute carrots and fried onions until cooked.
- After the meat is tender, add the mixture of wood ear, mushrooms, carrots, add enough water to cover the mixture. Season to taste and cook for about 5 more minutes.
Sprinkle some pepper on the bottom of the bowl, take the flower-shaped carrots and arrange them alternately at the bottom of the bowl, then scoop the meat on top. When the meat is frozen, you can turn the meat upside down, it will be very beautiful.
