High cholesterol levels and type 2 diabetes can increase oxidation in the body, leading to the production of more oxysterols.

Oxysterols can bind to LDL “bad” cholesterol, thereby accelerating the process of atherosclerosis and creating many agents that cause oxidative stress. Oxidative stress will make the DNA in cells vulnerable, thereby increasing the risk of cancer.

Although high temperatures can convert cholesterol in eggs into oxysterols, this does not mean that eggs should not be cooked. Eggs still need to be cooked to kill bacteria and pathogens. However, people should only cook eggs at moderate temperatures.

The best way to cook eggs is to use a low temperature and maintain it for long enough to cook the eggs. If frying, do not use too much oil. In fact, eggs do not need to be overcooked to be safe for health.
