Early summer, early morning on Phan Dinh Phung street, Dien Bien Phu, you will see women carrying baskets of green vegetables, including a basket of green fruits. Those are figs, especially abundant in Hue. In the gardens of Hue people, fig trees grow beautifully with large foliage, and fruits are densely packed at the base. Fig leaves are picked to wrap vegetables and fruits. Figs are processed into many delicious dishes, fig tea, mixed figs, stewed figs with bones, sweet and sour figs, raw figs with shrimp paste and some herbs... Mixed fig dishes are a delicious dish in Hue people's daily meals and a delicious dish at parties.

Also this time of year, it is the season of young jackfruit. Jackfruit is available in many places, but in Hue, young jackfruit, even ripe jackfruit, is popular. In particular, Hue housewives have turned young jackfruit into many cool dishes for summer days: young jackfruit cooked with shrimp and betel leaf soup, jackfruit cooked with vegetarian dishes, jackfruit mixed with shrimp and meat. Mixed figs, mixed young jackfruit, mixed banana flowers... rustic dishes have become Hue specialties, appetizers for parties, anyone who has ever eaten them will remember them forever.

In the middle of the hot summer, if you go to Kim Long, Nguyet Bieu, you will enjoy mangosteen. The fruit from the Southern homeland reappears in Hue, and then disappears again. Although not much, mangosteen from Hue has a sweet, rich taste... and is very popular. When you stop by a fruit stall and ask for the price, you will hear the seller say: "Hue mangosteen, so it is expensive!".

The hottest days in Hue are lotus season. In mid-May and June, lotus ponds around the Imperial City and Tinh Tam Lake bloom brilliantly with pink and white flowers and the green of the leaves and lotus pods, creating a poetic and romantic space. In addition, in the areas surrounding Hue, there are also beautiful lotus ponds, such as the lotus pond in La Chu village and many other places... Lotus is a heritage, for beautification and enrichment. When lotus blooms, lotus ponds attract everyone, everywhere to check-in and enjoy. Because everyone wants to have beautiful pictures with lotus. Lotus vases and lotus pots beautify every space. And lotus dishes in Hue are rich, sophisticated and extremely famous for their nutrition. Each part of the lotus plant, from the hands of Hue chefs, produces attractive dishes, such as lotus rice, lotus salad, lotus seed and longan sweet soup... the highlight of parties in Hue.

Late summer, in July, early August, is the season of Hue pomelos. For a long time, pomelos have been one of the specialties offered to the king, and now they are a famous garden specialty of the ancient capital. Before, pomelos were only grown in Thuy Bieu (Hue City), but now they have been developed in many other areas in Huong Thuy, Huong Tra and Phong Dien, with an organic farming model. Pomelos have a refreshing, fragrant taste that is not too sour or too sweet, delicious and nutritious, and are loved as a hometown gift that is missed not only by tourists but also by children of the ancient capital far from home. The fragrant, sweet taste of pomelos is processed into many delicious and attractive dishes. Not only is it a fruit to cool down in the summer, through the skillful hands of Hue people, pomelos have become famous for dozens of dishes with unique flavors.

Like the Hue lotus specialty, Thanh Tra is a very special fruit because all parts of Thanh Tra fruit are used to make delicious dishes with high nutritional value. Thanh Tra peel is used to make jam, cook sweet soup, Thanh Tra pulp is used to make squid salad... And from this fruit with a very beautiful name, it is also used to make Thanh Tra steamed chicken, Thanh Tra fried spring rolls, Thanh Tra sour spring rolls... Thanh Tra therefore became the first product in Hue to be recognized by the Asian Record Organization as an ASIA culinary value.

Hue has a harsh nature, but as compensation, Hue is blessed with the Huong River, the mountains and hills of the West, the Tam Giang lagoon..., creating beautiful scenery and rich products. With that advantage, the province is the premise to build the brand of a culinary capital, a large and unique cultural and tourist center, with the unique characteristics of this beautiful and harmonious land.
