His father, a man of Cantonese origin, decided to open a noodle shop to make a living. Later, his father passed away and passed the noodle cart to him. Now, Mr. Van's two sons have also succeeded their father.
"Crispy fried noodles is one of the most typical dishes of my noodle cart. Many customers order this dish because everyone, young and old, can eat it. Knowing that it has become one of the 5 dishes of Ho Chi Minh City on the list of 121 typical culinary dishes, I was surprised and happy. I believe that my family's traditional dish will be known by many people and sought out to eat," he said with a smile.

Mr. Ly Dieu Han (30 years old, Mr. Van's son) has nearly 15 years of experience selling noodles. He has been helping out since he was a child. He is currently the main chef cooking crispy fried noodles at this noodle cart, based on the experience passed down by his father.
According to him, authentic Chinese-style crispy fried noodles have two parts: the golden, crispy noodles and the sauce and side dishes. According to him, the secret of his family’s noodle cart lies not only in the quality of the noodles, which stay crispy for a long time, but also in the preparation of the sauce poured over them. The secret lies in the combination of ingredients such as shrimp, liver, skin, pork, octopus… stir-fried with bok choy, vegetables and seasoned well.

That is also the reason why Ms. Truc Le's family (40 years old, living in District 11) visits Mr. Trung's restaurant 5-6 times a week and almost every day orders crispy fried noodles.
