In most scientific literature, fats are referred to as "lipids". However, the term "fat" is more commonly used and easier to understand. That is why the term "fat" is used more frequently in this document.

Fats are synthesized in both plants and animals and, like carbohydrates, are composed of carbon, hydrogen, and oxygen, but in different proportions and chemical distributions. Fats contain more carbon and less oxygen and thus have a higher energy value than carbohydrates.

Some fats also contain phosphorus and nitrogen. One of the forms of energy storage in humans and animals is fat. Some plants, in addition to storing energy in the form of carbohydrates, also store fat in the form of seeds, tubers, sprouts and fruits. In Southeast Asia, fats in coconut, peanuts, sesame, nuts, soybeans, corn germ and other foods can provide a rich source of fat for meals.

Fats are insoluble in water but soluble only in chemical solvents and in alcohol.

Role: providing and storing metabolic energy for the body. Fat stores a large amount of energy in a small volume. The body uses fat to absorb vitamins and protect organs from damage.

Fat is needed to form cell membranes, the important outer shell of each cell, and the sheaths around nerves. It is needed for blood clotting, muscle movement, and inflammation.
Fat keeps the body warm and full of energy.
