These days, the newspapers are constantly talking about the Bib Gourmand list (good restaurants with affordable prices) of Michelin Guide Vietnam 2024. This year, Michelin Guide added 5 new restaurants in Hanoi and 8 new restaurants in Ho Chi Minh City, bringing the total number to 42 Bib Gourmand restaurants, compared to 29 restaurants last year.
Just like in June 2023, with the support of Sun Group, Michelin officially launched in Vietnam, announcing the first selected restaurants, and controversies immediately erupted. Some criticized the Michelin appraisers' choices as lacking taste. Others praised their international selections, based on many criteria. But regardless of praise or criticism, because cuisine depends on taste and the standards set by Michelin have been an unchangeable rule for decades, the Michelin Guide list continues to create new waves, pushing Vietnamese cuisine closer to the world, and establishing a position on a different level.
In 2023, during the first months after the Michelin Guide in Hanoi and Ho Chi Minh City was announced, the restaurants on the list were constantly full, with food lovers lining up to experience Michelin-recognized restaurants. Even after the curiosity and excitement had passed, these dining establishments still regularly welcomed a large number of customers.
Chef Yamaguchi Hiroshi of Hibana by Koki restaurant, which was awarded 1 Michelin star and Izakaya by Koki in the Michelin Selected list, said: "Since Hibana by Koki was awarded 1 Michelin star and Izakaya by Koki was listed in the Michelin Selected list, the number of pre-booked tables at Koki has been very large, we are always operating at full capacity. Koki restaurant is quite new in Vietnam, but now it is known to more domestic and international diners and tourists. If in the past, Vietnamese diners accounted for a larger proportion, now the proportion of international guests coming to the restaurant is higher, especially European guests and some Asian markets."
For international tourists and food lovers, the Michelin Guide is a prestigious guide, guaranteeing great experiences in each country. Therefore, many foreign tourists, thanks to the guide, have known and sought out Vietnamese restaurants, turning them into culinary destinations not to be missed when coming to Vietnam.
According to the "chef of the century" who owns 32 Michelin stars, Mr. Joel Robuchon, 1 Michelin star can increase sales by 20%, 2 stars can increase sales by 40% and 3 stars can double sales. Although Michelin has never affirmed that its presence will help elevate the culinary level of cities, or bring sales to the restaurants with stars, but looking at the reality, the profit potential that the Michelin Guide brings is really large.
But not only does it promote business, the Michelin Guide is a motivation for restaurant owners to constantly strive to improve the quality of service and food, creating competition and promoting the healthy development of the culinary industry, changing the international perception of Vietnamese cuisine.
Not long after the Michelin Guide appeared, Vietnam was consecutively honored as "Asia's Best Culinary Destination 2022" - World Culinary Awards, part of the world's most prestigious Travel Awards system (World Travel Awards). Hanoi was also honored to receive the award "Asia's Best Emerging Culinary City 2023" and lead the category "World's Best Culinary Destination 2024" according to TripAdvisor. Ho Chi Minh City also received international attention when it ranked 4th in the list of "20 cities with the best cuisine in the world in 2024" according to British magazine Time Out. Obviously, what the Michelin Guide brings to Vietnamese cuisine is undeniable.
Da Nang will be the new destination of Michelin Guide Vietnam 2024, and the full list of this year will not be announced until April 27. The mystery of the new names, at the new location of Da Nang, makes Michelin Guide Vietnam 2024 hotter than ever.
Rice paper rolls with pork, Quang noodles, vermicelli with fish sauce, spring rolls, mussels with rice paper... are eagerly waiting for the day their names are announced to the world, so that friends from all over the world know that Vietnam is not only about pho, rice paper rolls, vermicelli with grilled pork... Da Nang will not only be famous for Golden Bridge or My Khe, Ba Na Hills, but will become a destination for food lovers who want to explore a different Han River city through delicious dishes.
Exciting and also promising many surprises and controversies. There will be old and new names and also regrets when some restaurants are no longer in the Michelin Guide this year.
