Founded in 2015, the Vietnamese cuisine restaurant chain Saigon Mama, whose main dish is pho, has many branches in major cities such as Beijing, with 4 restaurants and the same number in Shanghai....

According to Chinese media, founder Kevin Chu aims to build a modern and casual restaurant brand that "brings the most authentic Vietnamese flavors" to Chinese diners. Recipes have been passed down from mother to daughter for three generations.

When we learned that we wanted to eat pho after many days in Shanghai with only Chinese food, Ms. Truong, a Chinese tour guide, introduced: "My family often eats pho at Saigon Mama, although I have never been to Vietnam and enjoyed pho in Vietnam, but pho here is shared by many people to have the same flavor as pho in Vietnam". It is not difficult to find Saigon Mama, because inside the shopping center near JingAn Temple in the center of Shanghai, there is a restaurant

Each shop has a different exterior decor, but all the classics of Vietnamese cuisine are available at Saigon Mama: pho (chicken and beef), bun cha, banh mi, spring rolls and bun bo Hue.

Just a glance and you immediately recognize this is a Vietnamese eatery. "To create a concept for Saigon Mama that appeals to the local working class, we focused on a teal and orange colour scheme, inspired by classic 80s food packaging, combined with a strong graphic style in the interior rich in colour, texture and detail," the introduction of the restaurant

Pho at Saigon Mama is served with basil, blanched bean sprouts and chopped bird's eye chili. The flavor of pho here is similar to that of pho restaurants in Ho Chi Minh City, rich and delicious. The beef is fragrant, tender and especially the beef balls are delicious when dipped with chili sauce and black bean sauce. A standard bowl of pho costs about 250,000 VND.

It takes the chef 12 hours to cook the broth for the restaurant's signature pho, using beef bones, beef tendons, onions and dozens of different spices.

The restaurant serves more than just pho. "The delicious rice rolls are wrapped in pork, rice noodles and vegetables, served with a variety of fresh herbs, lettuce and a light dipping sauce. The contrast between the cool freshness of the greens and the crispy fried spring rolls is 'mushy'. The Vietnamese spring rolls are a highlight as the homemade fish sauce adds a Southeast Asian flavor to the dish. The Vietnamese filter coffee and Saigon specialty banh mi are also must-try dishes," China Daily newspaper introduced.

"Nearly 10 years ago, Saigon Mama has grown from its promising first location in a small space in central Shanghai to today become the leading Vietnamese casual dining brand in China," China Daily praised.
