According to Chinese media, founder Kevin Chu aims to build a modern and casual restaurant brand that "brings the most authentic Vietnamese flavors" to Chinese diners. Recipes have been passed down from mother to daughter for three generations.
Each shop has a different exterior decor, but all the classics of Vietnamese cuisine are available at Saigon Mama: pho (chicken and beef), bun cha, banh mi, spring rolls and bun bo Hue.
Pho at Saigon Mama is served with basil, blanched bean sprouts and chopped bird's eye chili. The flavor of pho here is similar to that of pho restaurants in Ho Chi Minh City, rich and delicious. The beef is fragrant, tender and especially the beef balls are delicious when dipped with chili sauce and black bean sauce. A standard bowl of pho costs about 250,000 VND.
The restaurant serves more than just pho. "The delicious rice rolls are wrapped in pork, rice noodles and vegetables, served with a variety of fresh herbs, lettuce and a light dipping sauce. The contrast between the cool freshness of the greens and the crispy fried spring rolls is 'mushy'.
