How to mix sweet and sour cabbage

Ingredients for sweet and sour cabbage
1 - 2 cabbages (depending on the number of people in the family).
Prepare more: garlic; about 2-3 non-spicy chili peppers, add a few hot chili peppers.
4-5 lemons depending on size; 1 piece of ginger; about 3 tablespoons chili sauce; 4 tablespoons soy sauce; fish sauce, sugar, salt and 1 large, clean glass jar.
Lemon, chili, and garlic are indispensable ingredients for sweet and sour cabbage salad.
Raw material preparation
Choose cabbage that is light green at the top and gradually whitens from the stem to the base. The cabbage has a bright color, intact leaves, and is not too large. Do not choose cabbage that is dark green, because it is usually old and not sweet or crunchy.
When you buy the cabbage, remove the stems, separate the leaves, wash off the dirt, then cut into bite-sized pieces about 2 knuckles long.
Put about 2 liters of water in a basin, add about 3 tablespoons of salt, stir well to dissolve, then soak the cabbage in salt water for about 1 hour. After soaking in salt, wash the cabbage 2-3 times with clean water, remove and drain.
Peel the garlic. Wash the chili peppers, remove the stems and seeds; remove the stems and wash the hot peppers.
Peel and slice ginger.
Squeeze the juice from all 4-5 prepared lemons.

Make fish sauce and mix cabbage
Put garlic and chili peppers in a mortar and pound until smooth. Next, add all the prepared ingredients including sugar, lemon juice, fish sauce, chili sauce, soy sauce and half a liter of cooled boiled water, stir the mixture until dissolved.
Drain the cabbage and put it in a bowl or pot, add sliced ginger, whole chili peppers and pour in all the fish sauce. Wear plastic gloves and mix gently so that the cabbage absorbs the fish sauce. The sweet and sour cabbage mixture is complete, put it in a clean glass jar, leave it in a cool place for about 1 day for the cabbage to absorb the spices and be ready to eat.
