Chicken soup with medicinal leaves
The medicinal chicken soup is prepared by the Dao people in Sin Ho, Lai Chau province for daily meals or when guests come to visit. To make a delicious medicinal chicken soup, it is necessary to prepare many ingredients from medicinal plants picked from the forest, dried and stored for use all year round. Ms. Cheo My Lai, in Zone 5, Sin Ho town, Lai Chau province, said that to make a delicious medicinal chicken soup, the Dao people often use medicinal plants that are good for bones and joints, good for the heart, and many types of ginseng dug deep in the forest. These medicinal plants are washed and put into a pot of water to simmer to make broth.
After the chicken is butchered, it is cut into small pieces and mixed with ginger, minced lemongrass, salt, pepper, a little white wine, marinated for about an hour so that the chicken absorbs the spices. Next, add a little fat and stir-fry the chicken until the meat is firm, then pour the broth over the chicken and simmer until the chicken is cooked and fragrant.
In Sin Ho, every house of the Dao Khau people has medicinal leaves to cook soup to eat all year round. When spring comes, Dao women often go to the fields and forests to pick medicinal plants to save. After picking, the full baskets of medicinal plants are washed, chopped, dried and put on the kitchen loft for later use. When cooking, the medicinal plants are soaked in water to prepare dishes. On cold windy days, after bathing in medicinal water, eating a bowl of chicken soup makes everyone feel refreshed. This is also one of the secrets that helps the Dao Khau people always have good health, rosy skin and an optimistic spirit.
Bau wine specialty
The Thanh Y Dao people in Bang Ca commune, Hoang Bo district, Quang Ninh province have a specialty drink called Bau men la wine. Bau men la wine has a clear yellow color, a sour, slightly sweet taste, and the aroma of sticky rice.
Regarding the preparation of Bau wine, each family has its own recipe and cooking method, depending on the family's secret recipe. Bau wine is made by the Dao people from sticky rice, the rice is cooked into rice and then fermented for about 2 days and nights with wild yeast leaves. Then the fermented rice is put into a jar, after about ten days it can be taken out to drink.
To have delicious, golden wine, the Dao people use sticky rice with full, even grains and pound it in a stone mortar. The person making the wine must find five types of wild leaves growing in the natural forests of Hoanh Bo to make the leaf yeast. The Dao Thanh Y people consider this a secret experience, not widely spread to preserve the secret of their people's wine making.

Currently, in Bang Ca commune, there are over 10 households specializing in the production and trading of Bau wine on a large scale, with a productivity of 1,000 - 2,000 liters/household/year. Bang Ca Bau wine is also recognized as a 4-star OCOP product of Hoanh Bo district, produced by Bang Ca Traditional Products Development Joint Stock Company. The company was established in 2014 with 33 shareholders who are all Dao ethnic people of Hoanh Bo district.
Building an agricultural brand for Bang Ca wine helps local people have more production industries, create jobs and increase income for people. Wine products are bottled according to standards, with sturdy and beautiful labels. Wine is consumed during holidays, anniversaries, festivals, and even important events of Dao families here. Wine products are not only consumed strongly locally but also positively received in markets inside and outside the province.
