If the first time, last year, Vietnam only had 4 restaurants (one in Hanoi and 3 in Ho Chi Minh City) awarded Michelin stars, honored in the Michelin Guide - the world's leading culinary guide published in 1900, then the second time - in 2024, the number of Michelin-starred restaurants increased to 7.
In addition to the 7 starred restaurants, Vietnam this time also has 157 more dining establishments and 58 restaurants that won the Bid Gourmand award thanks to "good food quality, affordable prices" and 99 restaurants selected by Michelin (Michelin Selected).
First of all, this is very good news not only for cuisine. Having many restaurants and dining establishments awarded stars, won awards, selected… by Michelin is a recognition of the historical achievements of the Vietnamese culinary industry.
This event is also a turning point for the Vietnamese culinary tourism industry to develop in the direction of "industrialization", becoming the "kitchen" of the world in a quantitative way, instead of just purely qualitative and emotional as before.
As Mr. Gwendal Poullennec - International Director of Michelin Guides - said, "Vietnam has truly become an attractive destination on the world culinary map in the eyes of tourists and diners."
Another special thing is that in addition to Hanoi and Ho Chi Minh City, the second Michelin announcement also includes Da Nang with many restaurants and dining establishments named.
Along with that is the very reasonable comment of Mr. Gwendal Poullennec that, "the three cities of Vietnam, Hanoi, Ho Chi Minh City and Da Nang, all have their own colors. Vietnam's culinary culture shows abundant energy, passion and creativity that constantly surprises the market".
There could not be a better opportunity for Da Nang to make a breakthrough in culinary tourism - a field that has long been undervalued domestically compared to many other localities according to traditional standards.
The presence of Michelin Guide may be the solution to the problem of spreading the cuisine of Da Nang in particular and the Central region in general. Because in reality, in all the lands where Michelin stops, when the first Michelin Guide is published, the cuisine of that land will quickly be "covered" globally with a completely new position.
But more interesting and remarkable is that for the first time a restaurant in Da Nang, Vietnam, Nen Danang, has achieved a "Michelin Green Star".
The Michelin Green Star is an award that honors pioneering dining establishments that aim to build sustainable cuisine, providing an experience that combines culinary excellence with a serious commitment to environmental friendliness.
This shows that cuisine, through the lens of Michelin Guide standards, in addition to 5 consistent global criteria (quality of ingredients; cooking skills; harmony of flavors; personality of the chef; consistency of dishes over time and across the entire menu), also aims to be "green" for the environment like many other areas of life.
The “Michelin Green Star” is a shift in culinary awareness, showing that when eating today, deliciousness is not only assessed by touch but also placed in correlation with behavior and awareness of protecting the surrounding environment!
