The name Mi Quang says it all, as it clearly indicates that this is a noodle dish from the Quang Nam region, which used to be a province with Da Nang (Quang Nam - Da Nang). But how exactly did this golden noodle dish come about?

Mi Quang is not just a dish, it is a cultural symbol. Served at family gatherings, death anniversaries and Tet celebrations, a bowl of fragrant noodles has become one of the most popular dishes in the region. In Da Nang, people can enjoy Mi Quang for breakfast, lunch, dinner or any other time.

The story of Mi Quang begins in Quang Nam province, home to the strategic port city of Hoi An, which in the 16th century was a bustling trading post that connected Vietnam with China and Japan. Chinese traders came to the port and settled near Hoi An, bringing with them their culinary traditions, including egg noodles. Locals adapted these Chinese dishes to create Mi Quang: a bowl of noodles that is unmistakably Vietnamese.

The word mi originally referred to egg noodles, although mi Quang was developed from rice flour, a local staple. By then, the name had become ingrained in the region's culinary lexicon, persisting despite ingredient swaps.

The noodles are served with ingredients like shrimp, pork, chicken, or even fish or beef, all simmered in a turmeric-spiced broth. The dish is topped with fresh herbs, banana blossoms, peanuts, and grilled rice paper, then finished with lime, chili, and optional toppings like quail eggs or pork rinds. Some recipes also incorporate turmeric into the rice noodles, giving them a vibrant yellow color.
