Lindo (real name Manuel Arlindo, born in 1993). He is a prominent Angolan member of Quang Linh Vlogs' African group. Lindo is known as a gentle guy, good at Vietnamese, hard-working and passionate about Vietnamese food.
He opened a restaurant in the district market, personally preparing Vietnamese dishes to serve Angolans. The dishes include: fish in tomato sauce, sweet and sour chicken, braised meat, grilled pork rolls with betel leaves, bone soup cooked with potatoes, etc. When 'surfing' Lindo's Youtube channel, many viewers are impressed with his cooking ability.

In fact, on trips to Vietnam with Quang Linh, wherever he went, Lindo learned to cook Vietnamese dishes. He always looked for opportunities to learn about cooking and bring Vietnamese cuisine to Africa for people to enjoy.
In particular, in the daily menu with dishes such as fish in tomato sauce and chicken gizzards stir-fried with onions and vegetables; he was quite surprised because some customers even brought buckets, basins, and large boxes to buy food to take home. He commented that these two dishes are easy to eat, delicious, and suitable for Angolan taste. Among them, the most popular and favorite dish is fish in tomato sauce.
It is hard to believe that familiar dishes in Vietnamese family meals are so loved by Lindo and many African people. In videos of cooking dishes, Lindo constantly says: "These dishes are cooked in the Vietnamese style", "Lindo uses all Vietnamese spices, Vietnamese spices are wonderful"... making Angolan people even more curious about the taste of Vietnamese dishes.

Ingredients for making tomato fish sauce
- Fresh grass carp: 1 piece
- Tomatoes: 2
- Dill
- Fresh chili, dried onion
- Spices: sugar, fish sauce, oyster sauce, seasoning powder, water, pepper powder, cooking oil, water
How to make tomato fish sauce
Step 1: Wash the fish with diluted salt water and drain.
You should choose to buy fresh, firm fish for processing.
Step 2: Wash tomatoes, dill, onions, and chili.
Spices must be soaked in salt water and washed.
Step 3: Cut tomatoes into wedges; cut dill into pieces; thinly slice shallots and fresh chili.
Step 4: Place the pan on the stove, add cooking oil and wait until the oil is hot, then add the fish and fry until golden brown on both sides.
Step 5: Fry the shallots with cooking oil, then add the tomatoes and stir well. When the tomatoes start to soften, add the seasoning powder, sugar, and oyster sauce and stir well.
Process the dishes step by step so that the spices are absorbed evenly and the dish will be more delicious.
Step 6: After the tomatoes have melted into the sauce, pour the sauce into the fried fish and simmer for about 7-10 minutes so that the sauce is absorbed into the fish. At this point, add fish sauce and pepper to enhance the flavor of the dish. Step 7: When the fish is cooked and well seasoned, add dill and chili, cook for 1 more minute and turn off the heat.
