According to the experience of households in the craft village, to make the dried meat have a delicious taste and meet food hygiene requirements, the maker must have experience from the stages of selecting fish, gutting, marinating, and drying. The most important thing is to have a standard formula and determine the appropriate salting ratio, because if it is too salty, the dried meat will not be delicious, and if it is too bland, the meat will be flabby and lose its toughness.
