Under the influence of high heat, burnt sugar easily produces toxins, specifically chemicals such as carcinogens that can cause cancer and heterocyclic amines, polycyclic aromatic hydrocarbons (PAH)... These are substances that create favorable conditions for cancer formation.
In fact, cooks often use sugar based on intuition, making it difficult to measure the amount consumed, which can easily harm health. Using sugar indiscriminately, too much, especially refined sugar, can cause problems such as obesity, high blood pressure, liver damage, and increased risk of cancer.
In addition, braised pork is also rich in fat because it is mostly braised from pork belly.
