Nhan Duc vermicelli's journey to conquer the market

Phu Yen - Son La, a land of lush green hills, clear streams, and strong vegetation, is home to ethnic minorities who have been engaged in agricultural life for centuries. The warm climate, rich soil, and fertile land have created favorable conditions for growing arrowroot, a plant of high economic value and providing a stable source of income for local people.

From precious natural ingredients such as cassava, the story of Nhan Duc cassava vermicelli began with the passion and compassion of the founder. Since 1985, Mr. Dinh Van Nhan - the owner of Nhan Duc cassava vermicelli facility has spent a lot of time researching, learning the processing process and investing in the production of cassava vermicelli. From the desire to inherit the tradition from his grandparents, Nhan Duc cassava vermicelli production facility was officially established in 2015, in Chai village, Huy Thuong commune, Phu Yen, Son La.

The process of producing arrowroot vermicelli at Nhan Duc arrowroot vermicelli facility begins with planting arrowroot tubers in January and February every year. Arrowroot tubers are grown in fertile, lush soil, on high hills where there is often fog. The planting process then lasts until September and October when the plants reach the harvest stage. All steps in the production process of Nhan Duc arrowroot vermicelli must follow a closed process, always ensuring that food hygiene and safety requirements are met.

First, the main ingredient is arrowroot tubers collected from local farmers. The tubers are carefully selected to ensure the best quality before being washed by machine. Then, the arrowroot tubers are put into a mill to extract the starch. This process is carried out carefully to ensure that only the highest quality starch is filtered. The flour mixture after being taken out of the mill will continue to be beaten many times in clean water until the water is clear before the flour is collected. The flour is then stirred with boiling water until cooked and then put into a machine to press out the vermicelli. The vermicelli will then be taken out to dry in the sun until completely dry. After the sun drying process, the dried vermicelli will be collected and bundled into batches, then packaged ready for export to the market.

Mr. Dinh Van Nhan said: “ Previously, my family mainly purchased cassava tubers from local people and processed cassava starch to send to cassava vermicelli production facilities in the provinces downstream, but the economic efficiency was not high. Worried about that, in 2014, I was determined to learn and understand the process of making cassava vermicelli from traditional craft villages, and bought modern machinery to produce cassava vermicelli. In 2015, I established Nhan Duc cassava vermicelli production facility, invested in factories, machinery, and equipment; rented land to grow raw materials and signed contracts, committed to purchasing cassava for people in the commune, especially focusing on investing in ethnic minority households” .

The product is not only famous for its rich flavor, light chewiness and natural color but also brings many health benefits. Vermicelli is made from starch, but is cool and rich in nutrients, helping to control blood sugar and support diabetes treatment. In particular, the characteristic aroma of vermicelli from the Northwest mountains will make you remember forever.
