Taking customer tastes as a starting point, after 3 years of production, the pork roll product of Ms. Vo Thi Anh's family (Ha Linh commune, Huong Khe, Ha Tinh) has met OCOP standards, and the market has expanded to many provinces and cities across the country.

As a traditional and popular dish, ham and sausage products always have high competition in the market. However, with the right direction and determination to create delicious, clean and safe products, Song Anh ham of Ms. Vo Thi Anh's family (born in 1991) has reached a new level and become an OCOP product.

That said, the journey to this achievement of the young couple in the mountainous district of Huong Khe also encountered many obstacles. Ms. Vo Thi Anh recalls: “As someone with a passion for cuisine, after graduating from high school, I went to study to become a chef and restaurant owner. However, when I returned to my hometown, this profession had not yet developed.

In 2018, realizing that in my village and relatives there were many people raising and trading pork with very good quality, we thought of making ham and sausage products. Although we had basic knowledge, we lacked experience, so many initial batches of ham failed. At that time, every day I "broke" hundreds of kilograms of raw meat to find the recipe. With the view that customers are the center of service, after each batch of ham, I invited relatives and friends to try it and give their opinions. Gradually, Song Anh ham products were completed, suitable for consumers' tastes."

Ms. Anh's family's ham is made from the main ingredient of country pork.

The main ingredients of the product are still lean meat from the rump and loin. The advantage of the facility is that it always selects fresh meat, which is raised by Huong Khe farmers with natural foods such as rice bran, corn, wine lees, tofu residue...

After selecting the ingredients, we clean them and put them into processing. The meat is ground with a little fat, fish sauce, pepper, garlic and other spices, then wrapped in banana leaves and boiled. The special thing about Song Anh pork roll is that it does not lose the characteristic flavor of the meat but is still chewy, crispy, and has a rich flavor, suitable for customers' tastes.

Song Anh ham processing process is applied according to Vietnamese Standard TCVN 7049:2002 on heat-treated processed meat - technical regulations issued by the Ministry of Science and Technology.

When the initial product was well received by the local people, Ms. Anh began to think about investing in a large-scale, systematic production line. "We realized that most ham and sausage production facilities in the area were small-scale, manual production, not uniform, and the product designs were not eye-catching. Based on that reality, the family developed a plan to expand the scale and increase the competitiveness of their products," Ms. Anh added.

Thinking is doing, in 2021, the couple borrowed capital to invest in building a factory, modern machinery and equipment, and expanding production. In addition, they invested in perfecting the brand identity, strengthening quality control, and promoting and introducing products.

Therefore, Song Anh silk ham now combines traditional, manual processing and the application of advanced equipment such as meat grinders, sausage grinders, etc. and freezer preservation technology. The product is also packaged in many weights, making it convenient to enter the market. With the advantage of being young, Ms. Anh also quickly approached technology, converted to digital and brought the product to the trading floors.

Up to now, in addition to the Ha Tinh market, Song Anh pork roll has also been welcomed by consumers in some localities such as Hanoi, Nghe An, Da Nang, Binh Duong, etc. Notably, the product has also appeared in the Thai market.

Song Anh ham is chewy, crispy, and has a rich flavor.

Ms. Anh also excitedly showed that if in 2021, the facility's profit reached about 150 million VND, then up to now, the facility produces about 60 kg of raw meat per day (at peak times, it can reach 100 kg/day) - equivalent to a profit of about 20 million VND/month and nearly 250 million VND/year.

In the immediate future, the facility will continue to promote sales methods via the internet and social networks. Targeting users who are working people, do not have much time for housework, and have a need to use pre-processed products that ensure food safety and clear origin.

Evaluating Song Anh ham products, Mr. Nguyen Tri Dong - Deputy Head of the Department of Agriculture and Rural Development and Deputy Head of the Office of New Rural Development of Huong Khe district said that Song Anh ham has been recognized as meeting 3-star OCOP standards. The product has quite good quality, suits consumer tastes and ensures food safety. In the coming time, the district will support the facility to participate in trade promotion activities so that the product is known to more people, contributing to more convenient consumption.
