How to store eggs in the refrigerator
Most housewives store eggs in trays inside the refrigerator door. However, according to Dr. Tran Hoang Hai, storing eggs in trays attached to the refrigerator door unintentionally creates favorable conditions for salmonella enteritidi bacteria - which causes stomach diseases (found in egg yolks) to develop. The refrigerator door is often opened, causing the temperature of the eggs to change, losing their freshness.
In addition, leaving eggs in a tray attached to the refrigerator door at low temperatures also reduces the activity of enzymes in the eggs - meaning the lower the temperature, the lower the nutritional value of the eggs.
Furthermore, eggs taken out of the refrigerator into a normal environment will have condensation on the surface of the eggshell. These tiny water droplets are a good hiding place for bacteria, causing them to follow these water droplets into the eggshell, causing the egg to spoil quickly and lose its freshness.

Folk ways to preserve eggs
According to Ms. Nguyen Thi Van (an egg trader in Bac Ninh), if eggs are kept at dry room temperature, away from direct sunlight, they can be preserved for 7-10 days. However, there are many ways to preserve eggs in folk medicine as follows:
Lime water preserves eggs
Mix lime water with a concentration of 2 - 3%. Clean the eggs, place them in a jar, and pour in lime water so that the water level is 20 - 25 cm higher than the eggs. Place the jar in a cool place, away from sunlight, to keep the eggs fresh for 2 - 3 months.
Salt preserves fresh eggs
