Having opened the shop for nearly 2 years, Ms. Tran Thu Hien, the owner of the milk tea shop, said that she always has to research and create many new dishes to attract customers, especially young people. Currently, the "key" dish on the shop's menu is ice-crushed mushroom cocoa, which is loved by many young people. This snack is served in a steamer, making customers feel like they are eating a mushroom growing from the ground. The mushroom shape on top is made from coconut jelly and chocolate pudding. Below the jelly is crushed ice, covered with cocoa powder. The top layer of powder on the base is made from cocoa cookies that are dark brown like soil. "After importing the cookies, I will remove the cream in the middle and grind the cookies into a powder that is just enough to eat," Ms. Hien said. This type of cookie will have a moderate sweetness to neutralize the taste buds, so that when eaten, it will not be boring. The cocoa powder is poured in just enough and spread evenly with a spoon. The coconut jelly and pudding are both homemade. “After mixing the ingredients in the right proportions, I poured the jelly mixture into the mold and waited for an hour until the jelly solidified and was firm enough to shape,” Hien shared. The stem and cap of the mushroom are connected by a small bamboo skewer. Finally, the mushroom cap is covered with a layer of chocolate powder to make the dish more appealing. Hien experimented for a week to create the mushroom cocoa dish. After that, she let her friends and relatives try it. Based on her family’s suggestions, she gradually perfected the dish and added it to the store’s menu for sale.

The unique mushroom cocoa dish is served with black sugar pearls. In addition, the spoons used to eat this dish are also shaped like shovels so that diners can take check-in photos. According to Ms. Hien, diners can enjoy this dish in 2 ways. Those with a sweet tooth can enjoy each part of the dish to feel it. Conversely, diners can also mix layers of cocoa, cookie dough, condensed milk on top with crushed ice below to reduce the sweetness. Currently, Ms. Hien sells 300 - 400 mushroom cocoa trays every day, each tray costs 35,000 VND.
