What is egg coffee?
Egg coffee is a drink made from coffee and egg yolks. The black coffee is set aside and kept hot. The brewer then whisks the egg yolks with a little honey and sweetened condensed milk until the fishy smell is gone and the coffee turns a bright yellow color. Then, the egg cream is poured over the coffee in two separate parts. When drinking, the diners will whisk it well or eat the egg layer first, as they like. This drink is both a favorite coffee of Hanoians and a "must-try" that domestic and foreign tourists want to experience when coming to Hanoi.
Egg coffee is a drink made from coffee and egg yolks.
The "Giang Coffee" shop is considered the oldest and most famous in Hanoi serving this drink. According to the current owner of the shop, egg coffee was born in the late 1940s, due to the scarcity of fresh milk at that time, so his father, the first owner of the shop, used egg yolks instead. And since then, egg coffee has become a specialty of Hanoi.

Notes when making egg coffee
You need to beat the eggs long enough and continuously until the mixture is really fluffy, thick and smooth so that the cream layer does not have a fishy smell. Besides, do not beat the eggs for too long because the mixture will not maintain its thick texture.
When topping your coffee with the custard, use a 1:1 ratio of the custard to the coffee. However, you can adjust this ratio to suit your taste.
Store the custard in the refrigerator when not in use.
Good luck and enjoy!
