Boiled chicken
Number 38 is boiled chicken, a representative dish of Vietnam. To make boiled chicken, the cook needs to clean the chicken, rub it with salt, then boil the whole chicken in water with a little ginger, onion and turmeric to make the skin more golden and shiny. The factors to evaluate a good, standard boiled chicken are that the skin is not cracked and the meat is not bruised.
After boiling, the chicken will be cut into pieces, neatly arranged on a plate and covered with a layer of thinly sliced lemon leaves. Boiled chicken is usually dipped in lemon salt. In addition, some places like to dip boiled chicken in fish sauce with sliced onions. This is a dish that often appears during Tet, weddings, etc. This dish also symbolizes abundance and prosperity and is often eaten with sticky rice or bamboo rice.
