When the early morning sun slanted down its shimmering rays of light on Sung La, illuminating every path and every roof in the valley, the students were all present in their chef uniforms. Looking at the preparations of both teachers and students here to show off their cooking skills, I felt as excited as if I was about to be a judge in a cooking competition, rather than preparing to attend a graduation ceremony.
Culinary teacher Pham Hong Nam carefully guided the groups in their preparations and enthusiastically shared with me: The culinary training class was organized and opened in Doan Ket village, Sung La commune, Dong Van district from August 1st with 35 students. Today is the last class.
The students are all children of ethnic minorities in the commune. After graduation, students will be equipped with basic knowledge and skills such as: trimming, decorating, and preparing many dishes. Along with learning theory, students practice right in class, their classmates and teachers are the ones who grade them, so the classroom atmosphere is very fun. No one ever misses class!
Student Ly Mi Say skillfully trimmed vegetables into many eye-catching decorative dishes. I only dared to start a conversation when the work was almost finished. Say said that she was born in 2000, graduated from high school and got married. She and her husband owned a photocopy shop, but because the demand from the people was not high, their income was unstable. She had always dreamed of becoming a chef but had not had the opportunity to go to school. Tourism is a strong point of the locality, so after graduating from the cooking class, she and her husband planned to open a restaurant to serve tourists.
“When our small food stall opens, please take the time to come and visit us. Try the lowland dishes on this rocky plateau. I think the feeling will be different from when you eat in Hanoi,” Say sincerely invited.
As one of the most skilled students in the class, student Vu Thi May said that she can cook some traditional dishes of the Mong ethnic group, but when she learns more dishes with professional recipes, she feels more confident when working in some restaurants in the district. Attending the class not only opens up learning opportunities for us but also creates more job opportunities if we have solid skills.
Student Vu Thi May smiled: "After the classes, I tried to apply new dishes in my family's meals, and every time my husband praised them as delicious."
