Every afternoon, Ms. Phuong Trang's noodle shop located at the corner of Tran Binh Trong - Trung Nu Vuong Street (Hoc Mon District) becomes bustling with customers filling the tables and staff busily preparing dishes. Locals here are no strangers to this restaurant because it has been around for nearly 5 decades.

Quit accounting to follow in the footsteps of her grandmother and mother

Looking at the signboard of the restaurant named after her mother “Miss Ba Nhanh”, Ms. Phuong Trang proudly said that this restaurant has been around since her grandparents’ generation. The noodle shop at that time was actually just an old wooden Chinese noodle cart that my grandparents sold around the Hoc Mon market area, people often called him by his name “Mr. In’s noodle shop”.

Ms. Trang inherited the restaurant from her grandmother.

After selling for a while, a homeowner near the market felt sorry for them and decided to rent the premises to them. Then her mother helped her grandmother sell. “Later, the shop moved to this premises and has been selling until now, almost 40 years, not a short time. So now we are familiar with the customers.

Later, my grandparents passed away, so that people could easily recognize my family, we named the restaurant after my mother so that people could easily recognize her and have been selling here until now. In recent years, my mother's health has not been good, so I inherited her restaurant, with 4-5 employees to operate it," the owner said.

Actually, the food at my restaurant is not very special, the noodles, wontons, meat… are all fresh and delicious and can be made anywhere. The broth recipe that my mother passed down to me is what customers like the most, the broth is sweet, rich but does not contain MSG. The sweetness is completely taken from vegetables and bone broth.

She confided that thanks to this noodle shop, her grandparents raised 5 children to adulthood. Later, her uncles and aunts all had stable families and became civil servants. Only her mother still inherited the family restaurant.

According to Ms. Phuong Trang, since she was 6 years old, she went to the noodle shop to play, sometimes helping her mother, so the restaurant became a childhood memory and has a very special meaning in her life. At first, she did not think that she would follow in her mother's footsteps, so she studied accounting and worked at a company for a while.

The shop is open from 3pm to midnight, with steady customers.

Until the day Ms. Ba Nhanh got sick, because of her health and also because of her mother's grandparents' beloved noodle shop, she decided to replace her mother in selling and has been attached to it until now. The more she sells, the more she has a special love for this restaurant and the more she believes in her choice that day.

“Now my mother is at home recuperating, but I am still passionate about the restaurant. After finishing school, my children come to the restaurant to play with me every night, just like when I used to help my mother. Looking at that image, I suddenly feel emotional, remembering myself when I was young. The joy of a restaurant owner like me every day is to see customers coming to eat, support and be satisfied, that is more than enough,” she confided, looking at the crowded restaurant.

Secret from MSG-free broth

Ms. Phuong Trang's shop mainly sells noodles, wontons, and wontons. Many customers also order "ta la" like noodles or add wontons to their meals if they like. Each dish here costs from 35,000 - 50,000 VND depending on the type, quite affordable.

The noodle portion is attractive.

“Actually, the food at my restaurant is not very special. The noodles, wontons, meat… are all fresh and delicious and can be made anywhere. The broth recipe that my mother passed down to me is what customers like the most. The broth is sweet and rich but does not contain MSG. The sweetness comes entirely from vegetables and bone broth,” the owner assured.

The owner invited me to a bowl of special noodles for 50,000 VND, still piping hot. I was very hungry because I hadn't had dinner yet, the aroma coming from the bowl of noodles made me unable to resist and immediately "pick up my chopsticks". Just as the owner said, the noodles, pork, minced meat... in the bowl were quite adequate, not too special because it was the same as many other restaurants I've been to.

Mr. Hai is a regular customer of the restaurant.

The restaurant space is not too large, customers can eat and talk at the same time.

However, the rich and sweet broth makes a person with a Western taste like me quite satisfied. It is the broth in the bowl of noodles that made me rate this dish at the restaurant 7.5/10, worth trying.

Agreeing with me, Mr. Hai (37 years old, living in Hoc Mon District), also a regular customer at the restaurant, said that he "loves" the noodles here because the broth is very tasty. Many years ago, he accidentally stopped by here to eat, because he loved the taste of the broth, so every time he craved noodles or noodles, he would stop by this restaurant, gradually becoming a habit.

“The other ingredients are also just right, not too outstanding but edible. With such reasonable prices and enthusiastic staff, I will definitely support the restaurant for a long time," the customer added.

Ms. Trang is determined to develop her family's traditional dish.

Meanwhile, Ms. Hong Ha (54 years old) said that since moving to Hoc Mon more than ten years ago, she was taken to eat by an acquaintance and has loved the taste of Hu Tieu Mi since then. Whenever she has free time, she often takes her children to eat at this restaurant because it suits their taste. She usually comes here 2-3 times a week, sometimes more.

As the third generation in her family to inherit the restaurant, Ms. Phuong Trang promised herself that she would try her best to attract more and more customers, not letting down her grandparents’ efforts and her mother’s expectations. She said that she would continue to listen to customers’ feedback every day, from which she would consider changing the way she cooked and served her restaurant…
