On a leisurely weekend afternoon, I walked along the peaceful Chan Hung street in the heart of Ward 6 (Tan Binh District) and stopped in front of Mrs. Loan's grilled pork noodle shop, which has been "hot" for the past few days.

Seeing me, the owner greeted me warmly. With her gentle way of speaking and her gentle face, I felt like she was close to me like a relative in my family. Smiling gently, Mrs. Loan confided that in the past few days, she and her children, relatives, and staff of the restaurant still had special feelings when the restaurant was just listed in the Michelin award.

That's why when I received the Michelin package before the award ceremony, I didn't understand what it was. It was only when they announced the list and regular customers called to congratulate me that I started to look into it and realized that this was a prestigious award."

For her, this award is both a surprise and a great joy. She said she did not think the restaurant would win, because there may be many better restaurants. But this is also a great encouragement for the owner for decades of wholeheartedly serving her beloved guests.

The owner said there is no special secret, she sells with her heart and love for her customers.

“In your opinion, why did the restaurant win the award? Is it because of the delicious recipes?”, hearing my question, the owner said that her biggest secret is to cook with all her heart, as if cooking for her own family.

“If you cook with all your heart, everything will be delicious. I don’t have any special secret, I just choose the freshest ingredients. Every day I estimate how much I will sell and never leave it until the next day. It’s always been like that!”, the owner said.

Mother starts business, son continues

In 1993, Ms. Loan got married and moved from Dong Nai to Ho Chi Minh City. To make a living, she worked as a seamstress for a large factory, then worked as a freelance seamstress. Wanting to earn more money to support her family and raise her children, the woman decided to sell banh xeo and bo la lot on Chan Hung Street, helping her carpenter husband with whatever work she could.

After making a fortune with this dish, more than a year later she decided to switch to selling grilled pork vermicelli and surprisingly customers also really liked her dish. So the bold woman switched to selling this dish.

From selling on the street, then selling in a small hut, Ms. Loan saved money to open a larger space to sell. At one point, her grilled pork noodle shop was a "garden" of more than 1,000 square meters on the opposite land. In 2018, she switched to selling at home until today. Her husband also started selling with his wife, putting all his heart into this restaurant.

The owner continuously receives calls from customers ordering take-out, many of whom live far from the restaurant and are willing to pay high shipping fees.

The restaurant is called Hoang Van, named after her youngest son at the request of her father-in-law. "When my son Van was young, he was chubby and ate a lot, so my father wanted to name him after him. For many years before that, the restaurant didn't have a name, people told each other that I was just selling this part," she smiled, revealing the cute origin of the restaurant's name.

When they were young, every time they came home from school, her two sons would help their mother sell at the shop. Now that they are grown up, Van has another job, but his wife still often comes over to help her. Mrs. Loan's eldest son, Tuan Anh (29 years old), has been with her in this shop for the past several decades.

"If in the future I no longer have the strength to sell, I will be very happy and proud when my children inherit my beloved restaurant. My eldest child is very good and gentle, helping me and accompanying me all this time," the mother expressed.

The owner tries every day to bring bowls of noodles with all her heart to her customers.

Confiding in us, Mr. Tuan Anh said that he was very happy to do business with his mother. He felt the love and dedication that his mother had for her food as well as her customers. It was his mother's love for her customers that he learned from and he said that was also the secret to keeping customers for decades.

Mr. Nguyen (28 years old, living in Tan Phu District) said he has been a regular customer of the restaurant since he was a child. Close to home, affordable prices, delicious noodles with a harmonious combination of ingredients, there is nothing for customers to complain about.

“I read in the newspaper that your restaurant got a Michelin star, so I was very happy. Today I stopped by to eat something “hot”! Everything about the noodle bowl here is delicious, especially the dipping sauce and grilled spring rolls. Of course, I will support this restaurant for a long time,” he commented.
