Shrimp paste or sugarcane shrimp, a specialty originating from Hue, ranked 27th on Taste Atlas' global list.
This traditional Vietnamese snack consists of a mixture of pureed shrimp wrapped around a small piece of sugarcane.
Before that, the shrimp mixture is seasoned with spices such as garlic, sugar, salt, etc. Some places also mix it with ground pork and then steam, grill or fry it, Taste Atlas describes.
In the past, shrimp paste only appeared on special occasions, but today, this dish is increasingly popular, considered an appetizer or used by locals for "fun".
When enjoying, the shrimp meat is removed from the sugarcane, served with rice vermicelli, raw vegetables and sweet and sour dipping sauce.
Taste Atlas also ranked Vietnamese spring rolls at number 72 in the world's 100 most highly rated appetizers. This dish is filled with ground pork and shrimp, wrapped in thin rice paper.
Other ingredients commonly added to the spring roll filling include carrots, jicama, mushrooms, vermicelli, and bean sprouts. The spring rolls are then fried until golden brown, with a thin, crispy outer layer and a delicious filling inside.
In addition to being served as appetizers, both shrimp rolls and spring rolls can also be served as main dishes.
Founded in 2015, Taste Atlas (headquartered in Zagreb, Croatia) is known as a map that brings together traditional dishes from around the world.
