Under these comments, Ms. Pham Thi Phuong Mai (32 years old, Lao Cai), owner of Mai Tay Bac channel, sent her thanks and invited everyone to visit the Northwest.
Ms. Mai is from Hai Duong and followed her husband to the Northwest to live. Being a daughter-in-law in the highlands, she had the opportunity to learn and practice preparing new dishes. At the end of 2022, she created a TikTok channel to sell agricultural products and spread her love for highland cuisine.
She was surprised that the clips of preparing and enjoying rustic dishes of the Northwest were loved by many people. Each clip posted on the channel attracted millions of views.
Recently, her clips of delicious dishes made from moss have attracted more than 10 million views. Although the scenes and content are simple, anyone who watches the clips will be amazed and crave for them.
Ms. Mai said: “Moss is a specialty of the Northwest, but people must know how to harvest and process it to eat it.
For example, I often collect pond moss or field moss in clean water early in the morning. At this time, no one is in the fields yet, so the moss is not dirty. This type of moss has a light aroma, is sweet and slightly bitter, and can be prepared in a variety of ways.”
Moss season is very short and is considered a winter specialty. Therefore, Ms. Mai takes advantage of harvesting, processing and enjoying moss at the beginning of the season.
“After collecting the moss, I washed it and squeezed out all the water. Wash it several times to make sure the moss was clean, then chop it into small pieces. Next, I heated the pan and added the moss and stirred it evenly. This dish does not require any oil, just a little water.
When the moss turns bright green, I add salt and MSG, then continue to cook until it thickens. Finally, I add galangal, coriander, garlic, Vietnamese coriander, red basil, chili… to the moss pan,” Ms. Mai instructed in the clip.
Properly prepared pond moss and field moss will have a sweet, slightly bitter taste and a light aroma. If eaten with male papaya leaves and flowers, the taste will be even more authentic.
The Northwest bride said that although pond moss is delicious, the specialty of the highlands must be rock moss. To pick rock moss, highland people have to travel very far, about 3-4 hours to reach the upstream of the river. Rock moss growing upstream is guaranteed to be clean and delicious.
After being picked, the moss is squeezed dry and pressed into large pieces. Although it is a famous specialty, each piece of moss only costs 10,000 VND.
“Roast moss grilled in banana leaves is delicious. However, the preparation of the ingredients takes a lot of time.
The moss must be soaked for about 2-3 hours, then washed thoroughly. After that, the moss is pounded, washed again, and squeezed dry," Ms. Mai shared in the clip.
After pre-processing, she put the moss in a bowl and mixed it with pork, sticky rice flour, lemongrass, basil, mac khen seeds, and spices. Next, she wrapped it in banana leaves in many layers and grilled it over charcoal.
When cooked, grilled moss has the aroma of banana leaves, the stickiness of sticky rice and the sweet, rich taste of moss, pork... This dish can be eaten as a snack or with rice, both are delicious.
