Being the third generation in the family to make traditional cakes, Ms. Trinh Hong Giang, CEO of Gia Trinh cake brand, shared the memories and teachings of her grandmother and mother to create small, beautiful cakes with the bold flavors of Hanoi.

My childhood is associated with a small bakery located in a peaceful alley at 16 Ly Nam De Street, Hanoi. The small and pretty cakes encapsulate the memories and passion of my grandmother and mother. On death anniversaries, the first day of the lunar month or on holidays, Tet... my grandmother and mother would make traditional cakes for the whole family to enjoy. I still remember clearly what my mother taught me: "The ancient Hanoians made all kinds of cakes small and pretty, just to enjoy rather than to fill their stomachs. When eating cakes, the elderly often ate cakes in pairs, combining them like this to create harmony in flavor and also good for health".

The cakes are made delicately and elaborately. Even though I was young, I still noticed the meticulousness and strictness of my grandmother and mother when making cakes. When starting to make a type of cake, my grandmother and mother often researched and practiced until they achieved the original flavor. From the stage of choosing ingredients to the processing stage, everything had to be carefully prepared and checked. The ingredients had to be the best. The processing had to be steady and at the right level for the cake to have the right flavor. That's why every batch of cake displayed on the shelf had to be even, with the color of the natural ingredients, both harmonious and sharp.

The passion and dedication to traditional flavors have been passed down through many generations in my family, helping Gia Trinh cakes achieve the success they have today. Customers come to the shop not only to buy to enjoy, to find the flavor of their childhood cakes, but also to choose them as gifts.

I, a member of the 9X generation, graduated from the Foreign Trade University, majoring in Foreign Economics, then got a master's degree in Economics and a master's degree in Development Studies in India and Switzerland, but in the end, I devoted myself to my passion for cakes. Since 2018, I have officially focused on managing and administering Gia Trinh Bakery. Together with my family and colleagues, we have perfected and developed Gia Trinh as it is today. As the 3rd generation trusted to take over Gia Trinh from my grandmother and mother, I continue to maintain my passion and desire to preserve that culinary tradition, but on a broader scale, approaching production processes that meet food safety and hygiene standards of Vietnam and the world.
Understanding the psychology of customers, we are trying to find a solution to the "problem": What to eat that is delicious, affordable and still eye-catching. Although there are many changes to suit modern consumer needs, we always maintain our survival principles: Medicinal food, compassion, preservation, innovation. Currently, Gia Trinh has become a partner of major supermarkets in Vietnam such as: Winmart System, Aeon Mall/Aeon Max Valu, Lotte... and many large hotels".
