Chad Kubanoff (37 years old) is an American chef, currently living in Ho Chi Minh City. He is very impressed with Vietnamese pho and has had the opportunity to experience many delicious pho dishes with different unique variations.

Chad commented that pho is a delicious dish but he doesn't enjoy it often, only occasionally eating it in the morning, late at night or when he's sick.

Recently, he went to a famous pho restaurant on Tran Quoc Hoan Street (Ward 8, District 3) to experience the handmade pho dish on the spot. The restaurant has been open for more than 6 years and is a favorite dining destination for locals and foreign tourists.

Here, Chad ordered a regular pho dish for 80,000 VND. When he tasted it, he commented that “the broth had a strong beef flavor and a lot of cinnamon.”

“This is Northern-style pho, but the interesting thing is that they serve spices that are popular in all three regions. So diners can adjust the flavor to their liking,” he said.

The American chef revealed that he prefers Northern-style pho, adding garlic vinegar, herbs and chili sauce. “Oh my gosh, the taste is completely different. It’s like I’m eating a whole new bowl of pho,” Chad shared his feelings.

He also rated the pho as having a delicious and palatable flavor. The noodles were small, thin and very soft. The beef was the same. The bowl of pho also had tender stewed beef ribs.

“With herbs and spices, this pho really awakens all the senses,” he commented.

In addition to regular pho, another dish that Chad recommends diners try is stone pot pho, priced at 100,000 VND. The broth has bones and oxtail served in a hot stone pot. The pho noodles, beef shank and onions are served separately, and diners dip the ingredients themselves when eating.

The American chef said that the flavor of the pho changes with each seasoning. However, he likes this because he gets to experience pho dishes with different flavors and preparation methods.

Mr. Le Duc Truong (49 years old) - the owner of the pho restaurant that Chad visited said that the pho here has a Northern flavor, but uses spices from all three regions so that diners can freely season it according to their preferences.

For example, the Northern region has chili sauce, the Southern region has black sauce and garlic, and the Central region has onion and vinegar.

In addition, the restaurant's pho noodles are hand-made on-site, made from 100% pure rice. The steps such as selecting rice, grinding rice, and making noodles are also done in the traditional way. Diners can watch the process of making noodles and preparing pho from the open kitchen area.

The restaurant is open from 6am to 10pm daily. One of the special dishes at the restaurant is stone pot pho. The broth is served in a pot made of stone or Bat Trang ceramic to keep the heat for a long time. Each serving includes pho noodles, beef shank, beef ribs, beef brisket, oxtail, etc. served hot. Customers can enjoy it as they please.
