After being seasoned, the mac mat leaves are stuffed into the belly of the cleaned pig and duck, sewn tightly, left to absorb the seasoning, and then roasted. The quality of the roasted meat depends on the chef, who spreads honey mixed with warm water evenly over the pig while roasting. Honey not only helps to keep the skin of the pig and duck from cracking, but also gives the skin a shiny golden color and makes it crispy.
