Not requiring as much cooking and preparation as other dishes, lemongrass beef noodle salad appears frequently in Vietnamese meals - The Spruce / Cara Cormack.
Light, delicious, suitable for all ages are the words often used when someone mentions the dish "stir-fried beef vermicelli with lemongrass and chili".
Not only that, this dish also appears in many family meals because it is very simple to make, does not require too much cooking and preparation and is complicated like other dishes.
This dish also has many variations. Recently, The New York Times introduced food enthusiasts to a new variation, lemongrass beef noodle salad.
To prepare three servings of lemongrass beef noodle salad , you need 20 minutes to prepare the ingredients and about 25 minutes to cook.

Ingredients for lemongrass beef noodle salad:
4 tablespoons cane sugar or light brown sugar, coarse grain; 3 tablespoons rice vinegar; 4 tablespoons lemon juice; 4 tablespoons good fish sauce.
2 cloves garlic, minced; 1 ginger root, minced; 1 medium red chili, minced; 1 hot red or green chili, minced.
400g rice noodles; 400g beef, thinly sliced.
3 tablespoons minced lemongrass; 1 head of kale or lettuce; 2 tablespoons vegetable oil; 4 green onions, chopped; shredded carrots, cucumbers, and radishes.
Herbs: coriander leaves, mint leaves, basil leaves and perilla leaves, chopped; 4 tablespoons roasted peanuts, crushed; 4 tablespoons fried onions.
Prepare dipping sauce/mixture:
Using a large bowl, add sugar, rice vinegar and lemon juice, stir well until sugar dissolves.
Add fish sauce, garlic, ginger, chili and warm boiled water to the bowl, stir well and let sit for about 15 minutes to blend the flavors.
Cook noodles:
Boil water, add rice noodles and wait until noodles are soft.
Then, take the noodles out, rinse under cold water and drain in a colander.
Stir-fried beef:
Marinate beef, fish sauce, sugar, garlic and lemongrass for about 15 minutes.
Stir-fry beef over high heat with vegetable oil until cooked through.
Decorate and enjoy:
Line a plate with lettuce leaves, carrots, cucumbers, shredded radish and noodles, then add the stir-fried beef.
Sprinkle herbs, crushed peanuts and fried onions on top.
Drizzle the dipping sauce over everything.
Finally you can mix well and enjoy!
You can add some other ingredients according to your preference, such as thinly sliced onions and bean sprouts.
