Author Janet Clarkson writes in her book "Soup: A Global History" that every culture has its own version of soup, and each has a long history. The first people to make soup boiled everything from turtle shells to long bamboo strands, and metal pots were gradually used from the Bronze Age.
In the list of nominees for the 20 best soups in the world in 2024, Vietnamese pho was recognized by CNN as having a delicious flavor thanks to cinnamon, star anise and some other body-warming spices in the broth.
"Authentic beef pho must come with slices of beef simmered in broth," Andrea Nguyen describes the dish in "The Pho Cookbook."
The chef says that restaurants now serve a variety of pho with a variety of flavors. But pho bo is the original, and the most popular version in Vietnam, with many options including rare beef, a mixture of rare beef, brisket and tendon. In Hanoi, people also eat pho with a few fried breadsticks.
In addition to pho bo, other dishes that made the list include: Nigerian banga soup, Ukrainian borscht, French bouillabaisse, Portuguese caldo verde, Algerian, Libyan and Tunisian chorba frik, Peruvian chupe de camarones, Georgian kharcho lamb soup, Chinese Lanzhou noodles, Thai tom yum and Japanese ramen.
