According to News-Medical, a research team from the University of Nevada at Las Vegas (UNLV - USA) has proven that potatoes - eaten "intact" - can be used to replace other starches in people who need to improve their waistline and cardiovascular and metabolic health.

Potatoes are often considered unsuitable for dieters because it is a mistake to consider them as a regular vegetable, because they contain a lot of carbohydrates.

However, the UNLV authors note that when you categorize it as a starch, it's one of the good carbs.

In the study, volunteers were given a 100-gram unpeeled baked potato as a snack or side dish to replace other snacks or starches.

Meanwhile, a control group consumed a similar amount of white rice, with the same number of calories and carbohydrates as the potatoes.

Both groups were followed for 12 weeks. The results showed that the potato group had a slight decrease in fasting blood sugar, improved body composition, waist circumference, and a decrease in resting heart rate.

Research also shows that it is completely safe for type 2 diabetics without causing cardiovascular adverse effects as some rumors suggest.

According to lead author Dr. Neda Akhavan from UNLV, it is important to eat in moderation and be mindful of preparation methods.

The baked potatoes used in the study were unpeeled because potato skins have long been shown to contain more health-promoting nutrients than the flesh.

Potato skins contain a certain type of fiber called “resistant starch,” which has been shown to improve glucose control, fat markers, and increase feelings of fullness.

Also, you definitely shouldn’t eat them fried or mashed with too much butter. Boiling potatoes is also a good option, but if you want to retain more potassium in the skin – a micronutrient essential for a healthy heart – you should bake them whole.
