For over 50 years, 80-year-old Shizuo Mori has been waking up early to prepare caramel cakes. His Hecklen shop, located in the Toranomon area of ​​Tokyo, has long been familiar to many tourists.

The video of his skillful and skillful cake-removing technique shared on social media has attracted millions of views. Not only domestic tourists, many international tourists also visit the shop when they come to Tokyo.

The shop has about 24 seats. Every day, he prepares 50 cakes. Customers who want to enjoy the cakes prepared by his own hands often have to line up from early morning.

Andrea and Diego, a young Costa Rican couple, had to come to the restaurant three times to get a seat, because each time they arrived, the cakes were all gone.

He placed the cake pan on a glass plate, then gave it a gentle toss, causing the cake to automatically roll out of the pan and onto the plate.

Mr. Mori's cake is not too sweet, has a light, delicate texture, creating a pleasant feeling for the person enjoying it. He said this was a dish he could only dream of during difficult years.

That's why he decided to make the cake a signature dish on the restaurant's menu, alongside simple drinks like coffee, tea, or sandwiches.

For him, continuing to make these cakes is not only a job but also a source of pride. Even though he has turned 80, he has no intention of retiring.
