At No. 1 Pham Ngu Lao Street ( Da Nang City), there is a nameless coffee shop with no advertising sign, but it is always crowded with people coming to enjoy it. Thanks to its unique brewing method and rich flavor, over the past few decades, the coffee shop has become a meeting place for many coffee lovers.

At around 4am, Ms. Vo Thi Bich Lien (59 years old, living in Hai Chau District, Da Nang City) lit a fire to prepare filter coffee for customers. The smell of smoke from the stove and the aroma of coffee emanating from the small pots were like "bells" waking up the residents in the small alley.

The traditional Vietnamese coffee shop, using a cloth filter, piques the curiosity of many customers due to its unique brewing method. The brewing equipment consists of long, finely woven cloth filters and several small aluminum containers used to boil water for infusing the coffee.
Vietnamese filter coffee (coffee brewed with a cloth filter) originated in Saigon in the 1950s. The name comes from the filters used to brew the coffee. This brewing method was famous and considered a cultural aspect of coffee enjoyment in Saigon at that time.
After starting the fire and boiling the water, Ms. Lien keeps the fire to boil the water at about 90 - 95 degrees Celsius. According to Ms. Lien, the temperature of the water determines the quality of the coffee. If the water is too hot or too cold, the flavor of the coffee will be affected.
The stove is on continuously until the shop closes.
Then, she mixed 3 types of coffee, about 500gr, and poured it into the filter placed on the aluminum pot. To ensure the coffee powder was evenly soaked, she poured boiling water lightly and used a spoon to stir the coffee mixture in the filter.
The coffee making tools were sent back from Ho Chi Minh City by family members. From the brewing tools to the brewing method, every guest coming here will feel the old memories...
Next, she poured the extracted coffee into the filter for the second extraction. She stirred gently to let the coffee flow out for about 3 - 5 minutes. Once the water and coffee grounds were separated, she poured the coffee into a glass jar to cool it down, making it easier to prepare the finished cup of coffee.
The coffee shop is the main source of income for Ms. Lien's family.
From that unique brewing method, it creates a cup of coffee with a sweet taste, a little fatty taste in the fore taste; there will be a slight bitter taste in the after taste and the coffee aroma will linger in the mouth for quite a long time.

"I sell coffee every day and only temporarily close the shop when I am sick. While recovering, I still receive many phone calls from regular customers ordering coffee. On cold, rainy days, customers miss the taste of the coffee I make even more...", Ms. Lien confided.
Regular customers come to drink coffee from early morning
The "unique" filter coffee shop has attracted the attention of tourists through many posts shared on social networks. From the unique brewing method to the price of each cup of coffee at only 10,000 VND, the coffee shop has gradually become a "hot trend" in Da Nang City. Many tourists have come to Ms. Lien's filter coffee shop to enjoy and are very satisfied with the service of the shop owner.
Tourist Mikhail Stroganov (right) commented that the coffee flavor here is very rich and the brewing method is very interesting.
Mr. Nguyen Dung (74 years old, residing in Hai Chau District, Da Nang City) - a customer who has been attached to the coffee shop for more than 30 years, said: "I have been drinking coffee here for decades. Except for the days I go to work, I often stop by the shop and enjoy a cup of hot coffee. I find the quality of the coffee suitable for the pocket of ordinary workers. Although the price here is affordable, it still brings strong quality coffee...".
