This pasta dish is made with seasonal vegetables, often with the addition of pasta or noodles. Common ingredients include carrots, celery, onions, potatoes, spices, garlic, tomato puree, broth, beans, brown rice or barley noodles/pasta, and basil.
Ms. Bodrug gives the following instructions, according to Express :
- Start by dicing all the ingredients and getting them ready.
- Make a pot of broth by boiling vegetables over medium heat.
- Saute garlic and onion with a few tablespoons of water for about 3 minutes.
- Add carrots, celery, potatoes, basil, salt and pepper. Continue cooking for 5 - 6 minutes until potatoes and carrots are slightly tender.
- Finally, add the vegetable stock and then add the canned tomatoes and peas. Add the noodles or macaroni and bring to a boil.
- Reduce heat to low and cook uncovered for 12 - 15 minutes. Garnish with parsley and enjoy!
