The Michelin Guide - considered the Oscars of the culinary world - in 2025 honored 68 of France's best restaurants with generations of talented young chefs reviving culinary culture as a bright spot amid global instability.

In the 2025 Michelin Guide, 68 restaurants in France were awarded Michelin stars. Of these, two were upgraded to three stars - the most prestigious level - Christopher Coutanceau in the western French city of La Rochelle and Le Coquillage, a seafood restaurant in the Brittany region of northern France.

Speaking at the ceremony attended by 600 chefs in the city of Metz, eastern France, Michelin Guide Director Gwendal Poullennec emphasized that culinary culture still conveys knowledge and creates beauty even though the world is in a state of instability with escalating geopolitical tensions.

One of the standout names was Philippe Etchebest, who won a second star for his restaurant Maison Nouvelle in Bordeaux, France. Known for his work on television shows such as Top Chef, Mr. Etchebest said the younger generation of chefs is thriving.

France continues to lead the way among the 50 destinations in the world rated by the Michelin Guide, with 31 three-star restaurants, 81 two-star restaurants and 542 one-star restaurants.

The Michelin Guide is a series of culinary guides published by the Michelin company, a leading French tire manufacturer, since 1900.

In recent years, the Michelin Guide has expanded its scope of evaluation, focusing not only on high-end restaurants but also recognizing more diverse forms of cuisine on a global scale.

After awarding stars to street food stalls in Thailand and Singapore, last year the Michelin Guide surprised everyone by honoring a taco stand in Mexico's capital, Mexico City.

Michelin critics (often called inspectors) will anonymously visit restaurants to experience and give reviews. In Michelin's rating system, 3 stars is the highest./.
