Accordingly, Fletcher and photographer Thanh Huynh explored the diverse cuisine of all regions of Vietnam for 9 days.
She shared: "Riding a motorbike on the streets of Hanoi has always been one of the things I wanted to try but didn't have the courage. Famous chef Anthony Bourdain once told me that the best way to explore Hanoi or Vietnam is to sit on a motorbike, wear a helmet and immerse yourself in life like millions of locals here. Every moment will be filled with joy and surprises."

1. Riding a vespa
On her first night in Ho Chi Minh City, she chose to sit on the back of an old vespa and go into the city center to taste the diverse flavors of the cuisine at the local markets and was especially impressed with the roasted duck and banh mi.
2. Explore the Mekong Delta
Arriving in Ben Tre, Fletcher had the opportunity to tour the waterways of western Vietnam by boat. She also stopped at a handicraft workshop and had lunch with a local farming family.
