Van Cu Village - Nam Dinh and the hundred-year journey of preserving the soul of Vietnamese pho

Pho Festival 2025 (from April 18 to April 20) at Thang Long Imperial Citadel honors pho from three regions. Pho from Van Cu village - Nam Dinh stands out with its space recreating the traditional ancient craft village, attracting many tourists.

Pho Festival 2025, a series of events taking place over 3 days from April 18-20 with the theme "The Quintessence of Vietnamese Pho - Heritage in the Digital Age" at Thang Long Imperial Citadel. In the space gathering Pho from all three regions, Van Cu village pho - Nam Dinh attracts attention by recreating the traditional space of an ancient craft village.

Considered the “cradle” of Vietnamese Pho, Van Cu village is the birthplace of generations of Pho artisans. The ancient Van Cu people used to carry pho to Hanoi and Saigon to make a living, thereby contributing to spreading the rustic dish into a national symbol.

The characteristic of Nam Dinh pho is the strong taste of fish sauce, lots of ginger, less cinnamon and star anise, rich flavor. Unlike Hanoi pho, the broth is clear and light, with cinnamon, star anise, cardamom, and ginger added depending on the restaurant's recipe.

Nam Dinh Pho is often served with green onions and coriander. Each region has its own flavor, creating diversity and richness for this traditional dish.

The essence of Nam Dinh pho from the past to the present is the focus on the flavor of the broth. The broth is simmered from beef bones for many hours, creating a natural sweetness combined with the typical fish sauce of Nam Dinh. Thanks to this, Nam Dinh pho has been passed down through many generations and has become a traditional dish that conquers many diners.
