Having successfully developed Cao Thuy's five-color pork sausage to meet OCOP 3-star standards, Mr. Truong Xuan Cao and Mrs. Nguyen Thi Thuy (Binh Ly village, Thach Binh commune, Ha Tinh city) are more confident on their journey to bring their product to the "big market".

After many years working in the South, in 2013, Ms. Nguyen Thi Thuy (born in 1984) and her husband, Mr. Truong Xuan Cao (born in 1984, residing in Binh Ly village, Thach Binh commune, Ha Tinh city), returned to their hometown to start a business making Vietnamese pork sausage (gio cha). After some time, realizing that making only traditional gio cha wouldn't create a unique brand identity, Ms. Thuy and her husband decided to research and learn how to make five-color gio lua (pork sausage).

To realize this plan, Mr. Cao searched for information online and then went back to the South to learn the recipe and processing methods. In 2021, having gained confidence in his skills, Mr. and Mrs. Thuy began producing Cao Thuy's five-color pork sausage and brought the product to market.

Cao Thuy's five-color pork sausage is made primarily by hand using minced pork and various vegetables. A slice of Cao Thuy's five-color pork sausage contains tender pork, rich salted egg yolk, soft peas, a delicate sweetness from carrots, blended with the aroma of wood ear mushrooms and shiitake mushrooms, and a golden fried egg coating on the outside. All these elements combine to create a unique and appealing flavor.

According to Mr. Cao, selecting the right ingredients is crucial for producing high-quality five-color pork sausage. The ingredients must always meet food safety and hygiene standards. Pork, eggs, vegetables, and other produce are sourced from reputable agricultural stores in the area.

To build their brand and bring Cao Thuy's five-color pork sausage to customers, Ms. Thuy and her husband boldly invested over 300 million VND in purchasing machinery and equipment to create a closed production process, ensuring food safety and hygiene standards.

Ms. Thuy shared: “With the desire for our products to be known by more people, in addition to investing in machinery and improving product quality, we always prioritize food safety and hygiene, resolutely saying no to borax and additives. Not only our five-color pork sausage but also other products such as regular pork sausage and sliced ​​pork sausage undergo strict checks on raw materials and finished products to maintain our reputation with customers.”

Cao Thủy's five-color pork sausage has been recognized as a 3-star OCOP product.

After two years of producing multicolored pork sausage, Ms. Thuy and her husband boldly registered to participate in the "One Commune One Product" (OCOP) program to affirm the quality of their product and create opportunities to expand their market. In May 2023, the OCOP Product Evaluation and Classification Council of Ha Tinh City recognized Cao Thuy's multicolored pork sausage as a 3-star OCOP product, paving the way for the product to reach the wider market.

Reportedly, Thuy's husband and wife's production facility sells about 2 tons of pork sausage to the market each month; of which, the five-color pork sausage accounts for about 30%. With a selling price of 220,000 VND/kg for the five-color pork sausage, the facility earns an average of over 130 million VND per month, with a profit of about 30 million VND after deducting expenses.

Mr. Cao plans to invest in more machinery to optimize the production process.

As a customer who has used the five-color pork sausage product, Mr. Nguyen Van Long (Cam Quang commune, Cam Xuyen district) said: "In our locality, five-color pork sausage is a relatively new dish. I find Cao Thuy's five-color pork sausage very different from other types of sausage, with a very unique aroma and eye-catching colors. Especially, the fact that the product has been recognized as a 3-star OCOP product has reassured consumers about its quality."

Speaking about her future plans, Ms. Thuy shared: “I will invest in more modern equipment to reduce labor costs and optimize the production process to lower product prices while maintaining quality and ensuring food safety and hygiene. At the same time, we will continue to expand our market, bringing our products closer to consumers.”

The novelty and attractive appearance of Cao Thuy's five-colored pork sausage have helped the product gain acceptance from many consumers.

Commenting on Cao Thuy's five-colored pork sausage, Tran Huy Tien, Vice Chairman of the Thach Binh Commune People's Committee, said: "Unlike traditional pork sausage, the five-colored pork sausage made by Mr. Cao and Ms. Thuy has created a difference in the appearance and flavor of the product. Based on the initial success of the five-colored pork sausage, the local authorities will continue to support Ms. Thuy's family in developing and introducing the product to customers near and far."
