My Cang jumping shrimp pancake is famous for its familiar yet special flavor of Binh Dinh.
My Cang pancakes, also known as jumping shrimp pancakes, originated from My Cang village, Tuy Phuoc district, Binh Dinh. This specialty has gradually become a famous street snack in the land of Nau. The pancakes are made from simple ingredients such as minced pork, beef, shrimp, fried onions... Right from this step, the maker has to carefully select the ingredients. The rice used to make the rice paper dough must be milled from rice fields in the Eastern region. The shrimp used to make the pancake filling is freshwater shrimp living in the brackish water of Thi Nai lagoon.

After pouring the rice paper batter into the mold, the maker will add the fresh shrimp that are still jumping on top, along with some scallions, thinly sliced onions, bean sprouts and some straw mushrooms. Cover the mold and wait 5 minutes to enjoy. The cooked pancakes have a crispy golden color, exuding the characteristic, seductive aroma of seafood and herbs. When eating, diners will clearly feel the sweet, fresh taste of the shrimp.

Banh xeo cannot be without a bowl of sweet and sour fish sauce with garlic, chili, lemon, and sugar. Whether the banh xeo is attractive or not depends a lot on this dipping sauce. In addition, diners can wet half of the rice paper, place the banh xeo on top with a little raw vegetables, then roll it tightly and dip it in the garlic fish sauce. This way of eating is popular with many people because they can fully enjoy the flavor of the banh xeo without getting bored quickly. The most famous restaurant in Binh Dinh is Ba Nam My Cang banh xeo. From the center of Quy Nhon city, you have to travel about 20 km to My Cang, Phuoc Son commune, Tuy Phuoc district. The distance is quite far but the experience is completely worth the effort. In Hanoi, diners can try this specialty at Tu Xeo (Lang street, Dong Da district) or Thanh Sang jumping shrimp pancake (Le Hong Phong street, Ha Dong district), jumping shrimp pancake on Nguyen Phong Sac street or Truong Cong Giai (Cau Giay). Diners in Saigon can visit Thanh Dieu Jumping Shrimp Pancake (Nguyen Thi Nho Street, District 11) and Binh Dinh Jumping Shrimp Pancake (Thach Lam Street, Tan Phu District).
