On the morning of April 6, within the framework of the 12th Southern Traditional Cake Festival in 2025 held at Binh Thuy District Square ( Can Tho City), the activity of pouring a giant pancake with Nha Trang lobster filling took place.
The pancake has a diameter of 3 m, a circumference of 9 m, and the filling has 100 Nha Trang lobsters.

Despite the hot weather, people still jostled to see this special performance. The performance area was packed with people, with many cameras and phones raised high to capture and record the moments of making the giant pancake.
Mr. Nguyen Binh (20 years old, living in Ho Chi Minh City) excitedly said: "This is the first time I have attended a cake festival and have seen with my own eyes the artisan pouring such a giant banh xeo. The process of making the cake is very elaborate, everyone is looking forward to the moment the cake is finished and taking photos to check-in with this giant banh xeo".

According to the organizers, there are 15 artisans from Can Tho, Tien Giang , Vinh Long and Ho Chi Minh City participating in the cake making. The cake ingredients are all carefully selected and meet the requirements of freshness and food safety.
The pancake is 3 meters in diameter and 9 meters in circumference. The filling includes Muscovy duck meat, carrots, green beans and vegetables, especially 100 Nha Trang lobsters.

According to artisan Le Thi Hong Dung, giant banh xeo was also made at the 2024 Southern Folk Cake Festival. This year, the cake was given a "new look" by being filled with 100 Nha Trang lobsters.
After the cake was completed, the organizers divided it into small pieces and gave it away for free to festival-goers.
The banh chung is cut into small pieces and served free of charge to locals and tourists who come to visit and attend the ceremony.

Mr. Trong Nhon (34 years old, living in Can Tho City) said: "The artisans together created a standard Western-style banh xeo, cooked, golden and delicious. In particular, the cake was cut into small pieces and shared with thousands of people to eat for free, attracting a large number of locals and tourists to come and enjoy it."
In addition to the giant banh xeo, this year's Southern Traditional Cake Festival also features a "huge" banh chung, measuring 1.9 x 1.9 m, 0.8 m thick, and weighing 1.6 tons. The cake was made over 3 days, with a cooking time of about 20 hours. On the morning of April 6, the organizers cut this cake and gave it away for free to visitors.
