Ninh Binh raw goat with lemon is listed as the world's best dish

According to the Ninh Binh Department of Tourism, the global culinary site Taste Atlas described Ninh Binh's goat meat with lemon as a "traditional specialty of Ninh Binh", with a special way of preparation. The goat meat is thinly sliced, lightly cooked with lemon juice, combined with chili, garlic, lemon leaves, pepper and sesame to make the goat meat with lemon. This dish is often served with fig leaves and fruits, green bananas soaked in vinegar and soy sauce.

Mr. Bui Van Manh, Director of Ninh Binh Department of Tourism, said this is the first time a dish from Ninh Binh province has been included in the list of the world's best dishes voted by global culinary website Taste Atlas.

Mr. Manh added that Ninh Binh's raw goat meat with lemon has long been a specialty, highly appreciated by locals and tourists. From that success, Ninh Binh will preserve the tradition and further promote the raw goat meat with lemon as well as other specialties to better meet the needs of tourists when coming to Ninh Binh.

The dish of raw goat meat with lemon is made from goats of Ninh Binh province, mainly raised naturally on hills and rocky mountains. The goats eat grass, so the meat has a firm, delicious flavor, completely different from industrially raised goats. In addition to raw goat meat with lemon, Ninh Binh goat meat can also be processed into nearly 20 other dishes, such as goat dipped in fermented rice, grilled goat, steamed goat, stewed goat, goat hotpot, stir-fried goat with lemongrass and chili, pan-fried goat...

Thanks to its unique characteristics and increasingly improved service quality, Ninh Binh tourism industry has achieved many successes in recent years. In the first 3 months of 2025 alone, Ninh Binh tourism industry welcomed more than 4.4 million visitors, tourism revenue was nearly 4,700 billion VND, an increase of 29.3% over the same period last year.
