Phieng Phang village, Yen Duong commune is about 15km from the center of Ba Be district, Bac Kan province. The Dao people in the village have long had the traditional craft of making hand-rolled dong vermicelli. No one knows when, but almost every family in the village knows how to make vermicelli.

Halfway up Phieng Phang Mountain, when we arrived, the women in Dao ethnic costumes were busy, each doing their own thing, making hot rice vermicelli. Today was a beautiful sunny day, so the traditional hand-made rice vermicelli processing here was even busier.
Ms. Trieu Thi Tam (Phieng Phang village, Yen Duong commune, Ba Be district, Bac Kan province) said that she also did it before, but at that time it was mainly for family needs. The products at that time were not as beautiful and the quality was not as good as it is now. Since collaborating with Yen Duong Agricultural Cooperative, growing cassava in an organic way, following the guided process, the quality of the products has been increasingly improved.

"Today the sun is nice, we have to take advantage of the time to dry the vermicelli. In general, the work is very busy, but everyone is excited. It has been a long time since we had such a nice sunny day. From the traditional craft of making hand-coated vermicelli, Yen Duong vermicelli has become more known and popular when Yen Duong Agricultural Cooperative cooperated with the people" - Ms. Tam shared.
According to Ms. Tam, the most important step in making vermicelli is mixing the flour, then making the flour. The flour must be just right, not too thin. When you have been making it for a long time, the feeling is the key, from feeling the elasticity of the flour to the burning level of the fire, and the time to open the lid.

"If it is for family use, then it is fine, but when it becomes a product and is supplied to the market, the above steps need special attention. Only by ensuring these steps can we produce quality vermicelli products that attract consumers. That is why we always have to be very careful in every step, even the smallest, when making vermicelli," Ms. Tam added.

Looking at the batches of vermicelli being put on the rack, the smoke rising and the rich aroma of vermicelli from the hard-working hands of the women and mothers in Dao Phieng Phang village, even the most superficial person can feel the care, attention and meticulousness of those who make them.
Ms. Trieu Thi Man ( Phieng Phang village, Yen Duong commune, Ba Be district, Bac Kan province) confided that the planting and processing of cassava in Phieng Phang is now much different from the past. In the past, the processing was completely manual, from harvesting to cutting the tubers, washing, grinding, and filtering to get the powder, all done 100% by hand. But now, people use machines, only mixing the powder and making vermicelli is still done by hand.
"Prices are now very stable, products made from organically grown cassava are very popular. That's why people in Yen Duong commune in general and especially in Phieng Phang village are gradually increasing the area of cassava cultivation" - Ms. Man said.

Dao people in Phieng Phang village believe that the arrowroot plant and the traditional craft of making hand-coated arrowroot vermicelli have been helping people increase their income, stabilize their lives, gradually escape poverty, and become rich.
Talking to us, Ms. Ma Thi Ninh, Director of Yen Duong Agricultural Cooperative said that in recent years, the Cooperative has built a factory, purchased equipment and machinery, designed beautiful models and packaging, and improved quality. The Cooperative's vermicelli products have achieved 3-star OCOP and are preparing documents to be evaluated for 4-star.

"From the traditional craft of making hand-made cassava vermicelli of the local people, through association, investment, and guidance on the process of planting and caring for cassava plants in an organic manner, our cooperative has brought to the market quality cassava vermicelli products, building a brand with the characteristic of natural aroma and deliciousness.
This is also one of the ways to preserve and promote traditional cultural values from the traditional craft of making dong vermicelli. At the same time, we create interesting experiences for customers and partners when coming to the craft village.
Our goal is to preserve indigenous cultural features and use them to generate income. Through traditional hand-rolled vermicelli and modernly processed vermicelli, we have met the market demand in both quantity and quality," Ms. Ninh affirmed.
Traditional hand-rolled cellophane noodles are a typical agricultural product of Ba Be district. This is the result of a creative production process from valuable folk knowledge preserved and conserved by the people of Ba Be district. Along with that is the combination with modern advanced science and technology. Besides good quality, closed and safe organic production process, the product also has the representative and traditional character of the locality, creating farming practices and culinary culture not only of Ba Be district.
